Corned beef

I love corned beef.

As a student I once tried frying slabs of it, which was sort of revolting and nice at the same time! Ever since I've stuck to only ever having it cold in sandwiches or with salad.

What else can I do with it?

My favourite comfort food is slices of corned beef with mashed potato, green beans or peas and gravy. Blush

With Branston pickle, in a white bread sandwich made with butter.

Or, as above, but with piccalilli.

I have my sandwich filling between lettuce leaves. Sometimes salad leaves sandwiched between mayo-spread slices of meat.

No Branston, obvs.

I like it on wholemeal bread with Daddies sauce. Also corned beef hash as already suggested Grin

With cheese and branston pickle in a granary bread sandwich. Yum
Also my mum used to make a sandwich filling using the tinned corn beef. I think it also contained finely chopped onion brown sauce or tomato and probably salad cream or now it would be mayo. Anyway it was very good but have not had it for years

If you're low carbing @JellySlice, there's a recipe on the Low Carb Bootcamp threads for corned beef hash that uses celeriac rather than potatoes. Which is just as delicious!

Corned beef and Branston pickle sandwich then toast it under the grill on both sides. Yum

You can make it into patties - mix it with mashed potato (and some sauted onions if you fancy) and fry.

It also makes nice fritters if you batter it and shallow fry.

Corned beef hash makes quite a nice pie filling.

I shall try the hotpot, too. Maybe use swede rather than potato to reduce the carbs.
