Too many eggs!

Somehow I've ended up with 2 dozen eggs on their best before date. Short of feeding everyone scrambled eggs all weekend, any suggestions how not to let them go to waste?

Wish I had too many, my hens haven't laid for a week or so and having made a frittata to use up eggs last weekend we used our last one yesterday.

When I've got a glut I make a big frittata, slices potatoes par boiled, plus whatever I have to throw in it - we like sausage, leeks, peppers all cut up and fried off. Whisk the eggs and layer it all then bake for about 40 mins.

They will be fine for quite a while over their date. Just stick them in water to check - off eggs float.

They really do last for ages! Do the egg float test as someone said. I did this just this morning with some eggs that said their sell by date was Feb 1st and they all sank. I made a cake with them and it's come out perfectly.

Ideas aside - savoury crepes for dinner always go down well here. And a few for dessert too! Also carbonara, egg fried rice, fry up for breakfast, then obviously every egg combo on toast/with avocado

Baking wise- macarons/meringues need several egg whites, obviously any cake/loaf/brownie recipe needs them too.

Pancakes for breakfast, cake (one for now, one for the freeezer), frittata for lunch, yorkshires with tea.

But they will almost certainly be fine for a week or two (or maybe a month). Just crack each one separately into a bowl before adding to the rest if the ingredients if you are unsure.

I used up 6 eggs in a rich chocolate cake this evening. Only made one, as there's no space in the freezer.
