Help with a beef bourgignon

Part way through making it and realising how late I've started. I'm still on the job stage, and next is 3 hours in the oven

Think I could assemble it ready for the bake and leave overnight? Do it tomorrow?

Gah. I'm going for it. Oven off. Pots cooling. Slow cook tomorrow... fingers crossed I haven't ruined about £40 worth of ingredients confusedconfusedconfused

I'm panicking now!

I guess I'll pop it in the fridge before I go to bed and then slowly warm it back up tomorrow and back in the oven for the 3 hours remaining cooking time?

I can't decide whether to stay up and do it now and just be tired tomorrow sad

It'll be fine or if you have a slow cooker do it in that overnight?

Is it all cooked just ready to simmer in oven? If so that's fine, will taste great for an overnight soak!

@babysharkah no slow cooker sadly.

@OxanaVorontsova ok fingers crossed. Yes it's all in the big pot ready to go in the oven. I've left the veg out obvs.

I'm so stupid, I should have started sooner.

It's a once a year occasion with very dear family and I like to push the boat out.

So I'd be devastated if it bombed.
