Jazzing up a chicken breast

I'm on my own for a few days, and have bought myself three chicken breasts for my dinners.

I have a few ways to make them more interesting (spice rubs, marinades, that kind of thing) but am always on the hunt for new ideas. I've got a nicely stocked spice cupboard, so I'd love some suggestions for ways to cook them that'll be different over three nights.

All ideas gratefully received. Me and my stomach thank you in advance.

Wrap it in a slice of parma ham and place in a small baking dish./roasting tray with some tomatoes and butternut/sweet potato/ potato slices. Bit of oil, some chilli and bake for about 40 minutes. A friend does the same but smears pesto under the ham first.

Mmmm that sounds good. I don't have parma ham but I do have some very nice bacon. That would work, wouldn't it? Iv'e got everything else.

Fry it in the pan with salt and pepper. Inc wits cooked add a teaspoon of pesto and fresh cream. Mix and allow to thicken. Sprinkle with grated Parmigiano Reggiano and serve with courgette noodles. Low carb and delicious.

Beat it flat, breadcrumbs, fry in butter, serve with lemon wedges and green salad to make chicken schnitzel.

Butterfly it, stuff with sautéed mushrooms and garlic, wrap in puff pastry and bake. Eat with a white wine cream grain mustard sauce and sautéed spinach.

Marinade in tandoori spices, yoghurt, garlic and ginger, roast with paneer, onions, potatoes and peppers for a fakeaway.

Oh thank you! I'm going to do the schnitzel tonight I think. As it's cold here, I'll have it with cooked veggies rather than a salad. Green beans and brocolli, I think, with some baked tomatoes.

I think tomorrow I'll do a fajita style wrap, with spinach leaves and lots of chilli and yogurt. Sunday I will think about. I'm tempted to go get some puff pastry as that sounds like such a treat.

This is a great spice rub:

2 teaspoons ground fennel seeds
2 teaspoons mustard powder
2 teaspoons ground cumin
2 tablespoons of paprika.

Rub the chicken breast with some oil and then rub the spice mix into it and leave for an hour or so. Then fry. It is delicious with flatbread and tzatziki.

Sold pallisers That's going in my wrap tomorrow. I've just checked and I have all the bits. I'm surprised I have fennel seeds...

40 mins is way too long to bake a chicken breast. Takes about half that. So if doing that one would start the butternut etc off first.

I like schnitzel, prepping it is a PITA, but perhaps not if only for one!

I'd do chicken and pineapple skewers, I marinade the chicken in Levi roots reggae sauce, bake in the oven on a tray till cooked, then slice it and skewer it with chunks of pineapple, serve it with salad, avocado and Mediterranean grilled veg cous cous (shop bought from Sainsbury's) it's amazing

I know you're probably all set now but this is really tasty and very easy. (it's a lemon / garlic / cream recipe). I butterfly the chicken breasts then hit them with a rolling pin to make them thinner.

With a sharp knife, cut a slit into the breast. Stuff that pocket with Boursin garlic & herb cheese. Drizzle with oil and bake for about 25 minutes till cooked. Serve with vegetables or salad.

Other options are make a Hunter's chicken casserole with chopped bacon, garlic and mushrooms, or make a white wine sauce with tarragon and bake chicken in the sauce, serve with rice.

Oh no, the more ideas the merrier. I've become so bored with my usual chicken recipes that these are just wonderful.

My favourite thing in the world is lemon, so I am definitely going to keep that one saved, thank you haggisaggis

Not a blog I've seen before so I'm off for a nosy.

Cut into bite size pieces, season and fry briefly in butter with a drop of oil. Into a dish with chunks of camembert. Sauce of 100ml chicken stock, 100ml white wine simmered in the frying pan with the chicken juices. 200ml cream, simmer again, pour over the chicken and camembert for 30 minutes. Bloody delic!

Poach with Cream, tarragon, peas, white wine. Serve with sweet potato mash.mmm.

I'm not a fan of breast. With (4 ) boned chicken thighs I use a table spoon of olive oil and rub them with Lebanese 7 spices. salt and pepper to taste and grill them for 15 minutes.
