White bits on salmon

How can I prevent white bits appearing on my salmon when I bake it? Very unappetizing.

You can’t - it’s the effect of the heat on the protein...you could maybe try cooking it longer at a lower temperature but not sure it would work

I like to brush a bit of paprika, sumac, pepper mixed with evoo on my baked salmon and i never get white bits and fish turns out with a lovely rust colour and flavour is much nicer too.

Is it farmed Scottish salmon?.
There are big problems with this fish due to the method of farming.
Problems are caused due sea lice infestation of the fish pens and the salmon, this is treated with chemicals or antibiotics thrown into the water to treat it.
Personally I would never eat farmed salmon, only wild caught.

It's got nothing to do with farmed salmon. Fish are made up of protein, when it cooks out it turns white.

It's the same stuff you get when you boil a bacon joint. It's protein.
