Egg white ideas - not meringue

I have a stack of egg whites left from making creme brulee. I don't just want to make meringue because DP isn't keen. Any ideas? I don't want to freeze them btw as I've been doing lots of cooking and have a full freezer and no containers left!

I'd use them to bulk up scrambled egg to get a bigger protein hit...

Whip them and add sugar and flour, pipe onto a tray and bake, cover with jam, roll up

Swiss roll

Add a bit of coco and use cream instead of jam for chocolate Swiss roll

I use them in omelettes. I use 2 or 3 egg whites & 1 whole egg, I find it makes a much lighter omelette, I don't like omelette made just out of whole eggs as it's just too rich for me. I also add some veg, herbs etc. Nice lunch, filling but not too heavy.

Er...that won’t make Swiss roll....just a very unpleasant floury meringue. Swiss roll has whisked whole eggs.

Second using them to make egg white or (whole egg plus whites) omelette, nice with red peppers, mushroom, spinach and some feta and Parmesan. I make a large batch in a baking pan for work lunches, lasts 3-4 days in fridge or freezes.

Sweet solution is to make friands. Delicious and use up lots of egg whites. Favourites here are with raspberry, mixed berry, pear or peach. Frozen berries or tinned fruit fine this time of year. Really easy too, just stirring together the ingredients.

Are friands the same as financiers? Financiers are lovely little things.

Or omelette, filled with spinach and rocket salat, wrapped in a tortilla.

Friands are very similar to financiers, but have fruit in them. Plus I don’t think most recipes call for browned butter like financiers.

Macaroni cheese soufflé?
Make macaroni cheese then whip some egg whites, fold through and bake in oven. Makes it all fluffy.

I think I'm going to try the friands tomorrow as they sound right up my street. I have some silicone Madeleine moulds I've never used so will give those a whirl too.

Angel food cake.
It’s basically fat free cake. Mary Berry or the Barefoot Contessa both do recipes with a hint of lemon.
Serve with fresh fruit. So good.

Don’t worry, friands tend to be extremely easy to turn out, especially from silicone moulds. They do rise, so some muffin moulds are ideal (traditionally made in oval or rectangular deep moulds).

The friands I made - they unmoulded very easily. I'd never heard of them before, it will be making them again!

Oh, they look lovely in the madeline moulds!
Delicious, aren’t they? I kid myself they are slightly healthier than some cake, as relatively low fat and sugar, and higher protein from the egg whites and ground almonds. I know, I know.... they are actually pretty filling and a good sweet snack for dcs with some milk.
