Dinner ideas for tonight.

It's been a horrible to start to 2019 and so tonight whilst I have the day off work I was hoping to cook myself and the OH a nice dinner.

Something a bit different but also something that doesn't take too long.

Would anybody be able to provide me with some inspiration?

Chicken quesadillas
Ramen noodles in broth
Smoked haddock chowder
Potato pancakes with sausage patties, tomatoes and fresh basil
Mussels and French fries

I'm sorry about the bad start to 2019 and hope you have a lovely dinner Thanks even a jacket potato with butter and cheese feels special if you light candles and eat off nice china with a linen napkin and flowers on the table.

More ideas:
Steak with green peppercorn sauce, chips
Scallop and pea risotto
Prawn and feta and tomato stew
Traybake of chicken thighs, chorizo and potatoes with a nice green salad and warm garlic baguettes

Rack of lamb, (just roast quickly in the oven, spread the skin side with whole grain mustard beforehand). Serve with Greek style diced potatoes also done in the oven, and some peas and leeks done in the microwave. You can get the potatoes & veg ready prepared if you are short of time!

Salmon cooked in a parcel with butter and a splash of wine, serve with asparagus.

Why do I always forget about rack of lamb, so tasty. Ada do you brown it first before spreading with mustard and putting in the oven?

Xiaoxiong No, I don't brown it, I score the skin in a XXXX pattern, then spread with wholegrain mustard or rub in mustard powder and drizzle with a little honey. Sometimes I lay it on a bed of garlic or herbs. It cooks at quite a high temperature, and colours well.

I certainly have lots of inspiration now for future ideas!

@Ada I always forget about lamb, I may try and get some lamb. Although o don't like mine pink so may have to cook a bit longer.
(Best ideas for cooking it... in foil or not)?

On a bed of spring onion mash with green beans ?!?! Yummy!!!

I wouldn't put a rack of lamb in foil, I'd only use foil for something like slow cooked whole leg of lamb.

That combination of colcannon, lamb and green beans sounds fab Summer, enjoy your meal! Wine Wine
