Jacket potatoes with cold beef - sides?

As the title says really... have cold roast beef to use up today with a jacket potato - what would you have alongside? Salad? Veg? I just feel like it's a bit meh and needs livening up somehow...

Have you got some dried spices yuh could fry it up with first? Moroccan type spices are nice . Then some coleslaw?
I'm having jacket with beans for my tea tonight, really looking forward to it!

Horseradish Coleslaw would be epic.

Mix some cream cheese with a little sour cream to loosen and add some horseradish sauce to taste: dollop on to jacket spud. Serve with sliced beef, rocket, room temperature tomatoes and cooked (not pickled) beetroot.
