What soup with gammon stock?

I have just cooked a large gammon joint in my new slow cooker Smile
Not eaten any yet but it looks superb. I decided that as it was the first time I would just use water in the pot as I wanted to see what the flavour and texture would be like before I get fancy.

Upshot is I now have a half full pot of gammon stock that I would like to use rather than waste, I soaked the gammon first for a bit and have tasted the stock and it isn't at all salty - it is however full of flavour Smile Never made soup before but I was thinking something like leek and potato might be nice. Does the veg thicken the soup or does something else have to be added to thicken?

I think I would like to make a smooth soup but only have a stick blender, will that do it?

Any suggestions for a soup that would work better with gammon stock please. TIA. Smile

Ooh, lovely.

Lentil and gammon:

Dice an onion, carrots, potato, celery. Soften in oil. Add the stock. Add a big handful red lentils. Simmer till veg and lentils are soft. Take off heat. Blend with stick blender. Add shredded gammon, warm through. Sat and pepper to taste.

Kale and potato, spinach and potato or leek as you said. Stick blender is perfect. Half the job with soup is getting the flavour, so you are most of the way there - sweat an onion and some celery ideally with whatever veg you are using, a twist of pepper then add your stock and simmer then blend.

Split pea and ham soup is delicious. Freeze or refrigerate your stock until you are almost at the end of your gammon. Cook half pack of dried split yellow peas as per instructions. Meanwhile in a large pan bring stock to a simmer and add 4 large diced carrotts, half diced swede, 4 sticks celery chopped , 3 large diced potatoes and onion. Cover and simmer until veg is cooked. Add black pepper, teaspoon dried thyme. Rinse split peas and add to the vegetables. Use your stick blender to make smooth. Depending on how much stock you had you may need to add more water. I like it very thick. Dice leftover gammon and add to the soup. Adjust the seasoning. Doubt you will need salt. 😋

PS if you don’t want to cook the split peas you can add a bag of frozen peas to the vegetables instead.

Minestrone- add veg, tinned tomatoes red wine, left over ham, and pasta at the end.

scoth broth but the thick kind not the silly water stuff some make.making it with your stock should be great.added yay is the pearl barley which I love in soups
yes stick is fine.

Bacon & bean, use white haricot beans, onion, garlic, carrot, and celery. When the beans & vegetables are cooked you can blend the mixture, then when warming through to serve, you can add diced bacon from your gammon joint.
If you don't have any left over gammon, sliced cooked sausages work well too, or just fried croutons are good too.

Ooh, my favourite! I always add a cinnamon stick and some cloves to the cooking water, it makes it really aromatic . Anyway, I would use any root veg for your soup, or a combination of whatever you have - Swede, carrot and parsnip all work well and blend down beautifully. I might add a chopped apple too if you have a sad one left over from Christmas!
