Now Christmas is out of the way!

Back planning some healthier food for the week!

Tomorrow I’m at a house party so that could be a disaster

Tuesday: veggie sausage and bean casserole with mash and green veg.

Wednesday: black bean and veg fajitas

Thursday: lentil and kale dhal and rice

Friday: probably leftover Dahl In jacket potato with salad

Yes, I started again this week!

Sat: shepherds pie
Sun: sausage, mash & beans
Mon: creamy chorizo & tomato pasta
Tues: confit duck, roast spuds, lots of green veg (brocolli, sugar snaps & asparagus), brown lentils with diced carrots, celery & shallot
Wed: various leftovers
Thursday: JO salmon nicoise from his 5 ingredient book
Friday: chilli with jacket potatoes

Very meat & potato heavy this week. Have been trying to use up the enormous sack of potatoes bought for Xmas Smile

Me! I haven't ever stuck to meal planning before I must confess but it's a new resolution of mineWink

I've made a list (only cooking for myself and sometimes boyfriend) so it's not to bad,

breakfasts are to be either plain special K or porridge w/ dairy free coconut milk (I use the koko brand) and some blueberries.
Usually a black coffee too.

Lunches
Piece of wholewheat toast (got a big loaf in the freezer atm) w/ avocado & tomato. OR Heinz beans/ a fresh tomato soup.

Snacks
Sliced kiwis, apple, dried apricots, cereal bar etc.

Dinners
•Frozen plain basa fish fillet (so cheap and tastes amazing!) w/ either wholegrain rice or some wholewheat pasta and pesto, frozen veggies to go with.
•A veggie bolognese w/ supermarket brand veggie mince, fresh mushrooms, garlic& onion, chopped tomatoes and some wholewheat pasta, rocket salad. (Can get 2 meals out of this too!)
•Pasta w/ canned tomatoes, onion, garlic and some canned tuna and canned sweet corn. Broccoli on the side.

I'm sure I'll have some cheese available too for the pasta! We're hoping to move so any spare cash is good!

Tomorrow - pasta with courgette & bacon for DC, dal for DH & I
Friday - sea bream and veg
Saturday - friends staying so something chicken eg fajitas or shawarma
Sunday - chicken stir fry
Monday - sausage roast veg bake

I'm just getting back into the swing of things with a few new cookbooks as Christmas presents - plan for the rest of this week:

Tonight: curry leftover roast beef

Thurs: smoked mackerel, boiled potatoes, watercress salad

Fri: slow cooked lamb shoulder, smokey aubergine salad

Sat: smoked haddock chowder

Sun: roast chicken, bread stuffing, rocket salad

Tonight: Coconut chicken and green pepper curry (Thai style) with cauli rice, edamame beans and probably a carrot salad.

Friday: Sausages with Moroccan spiced giant couscous, roasted red peppers, spinach and lemony harrisa yog.

Saturday: Chimichuri tofu steaks with sweet potato wedges, spinach and broccoli.

Sunday: Roast butternut squash sauce pasta, with rocket, pine nuts, balsamic vinegar and chickpeas. Half the butternut squash for this, the other half will be cubed, roast with thyme and garlic and frozen for use as a super quick pasta sauce at a later date.

Monday: Left over from tonight (will make triple curry portion and freeze as it reheats so well and is super tasty)

That is as far as I have got.

This week's been a bit of a write off, we've been eating scratch meals of left over NYE party food and out of the freezer. Then we are out all weekend. But for next week we will have:

Monday: Beef Massaman curry/Butternut squash curry, with jasmine rice and carrot salad
Tuesday: Tuscan bean stew (+ chicken for meat eaters), carrot and swede mash, perhaps crusty bread
Wednesday: 'Sabzi polo ba mahi' (Persian herby rice with lemon basted salmon), salad
Thursday: Smoked mackerel fillets with crushed potatos and salad
Friday: Koftas/Falafels in pittas with garlic yoghurt, cabbage and red onion, chips
Weekend: not sure

Tonight was Thai veggie fried rice
Tomorrow cheese free pizza
Sunday: leek and mushroom pie with potatoes and veg
Monday: vegan pasta and pea Alfredo
Tuesday: tofu, pea and cashew curry
Wednesday: white bean and courgette stew with crusty bread
Thursday: tofu, broccoli and mushroom stir fry with rice noodles

Weve started healthy ish meal planning this week

Sat:warm salmon and potatoe salad with poached egg

Sun: fish chips and peas (dd (4) choice)

Mon: home made chicken and noodle soup

Tues: baked potatoes with tuna and salad

Wed: tomato and bacon risotto with salad

Thurs: pea and asparagus frittata with wedges

Fri: piri chicken kebabs with spicy rice

Today - pizza
Monday - Vietnamese minced pork and salad
Tuesday - MIL cooks as she does childcare that day
Wednesday - something with minced beef, probably burgers or pasta
Thursday - sausages, mash, broccoli and peas
Friday - chicken stir fry and noodles

I’m a bit under the weather so have tried to make it as easy as I coukd this week.

Sat Ginger & Honey Stirfry with noodles.
Sun Lamb burgers (frozen not homemade)
Mon Chicken Tikka skewers from Eat Well for Less. The paste was made last week DD will make the flatbreads.
Tue Hairy Dieters Chilli Bowls
Wed Sausage Tray Bake
Thu Pork & Pineapple Tacos
Fri Eating out Smile

Cold smoked salmon flaked
Bag of mixed leaves
Walm boiled new potatoes chopped into quarters

Arranged nicely on a plate

Honey and mustard dressing lightly drizzled on top

Lightly poached egg on top

Monday: tuna pasta bake for everyone else, soup for me
Tuesday: DH mezze dinner for him and DC, soup for me (am out both nights)

Tomorrow - Potato pakora burgers on naan bread with yogurt

Wednesday - at my parents for dinner

Thurday - homemade pizza

Friday - Out for a curry with friends

Saturday - macaroni cheesw

Sunday - curried roast chicken with root vegetables

Sunday: going out
Monday: Thai red vegetable curry
Tuesday: biriyani with garam masala roasted cauliflower
Wednesday: lentil and bean chilli
Thursday: veggie burgers with salad

Tonight: DH sorting it or maybe pizza
Sat: might be out with friends. If not - leftover veggie curry with flatbreads
Sun: Sunday roast for lunch then either curry/something on toast
Mon: sweet potato, goats cheese and caramelised onion chutney tart with salad
Tues: sausages, sweet potato wedges, cauliflower cheese and green veg
Weds: miso cod with Pak Choi
Thurs: prawn cocktail salad

Tonight - Burgers either chicken or Beef with Salad
Sat - Gammon, chips and beans - (leftover from Christmas)
Sun - Meatloaf, mash and cabbage
Mon - Toad in the hole
Tues - Taco's
Wed - Chicken Stew (from Freezer)
Thurs - Spag Bog
Fri - Fish (have salmon, fish cakes, Fillets and fish cakes in freezer).

Just started maternity leave so trying to get back to it.
Friday- fajitas
Saturday- cottage pie
Sunday- rack of venison (was really reduced in M&S!)
Monday- sausages, roasted cauliflower Alfredo and salad
Tuesday- pork and Parmesan meatballs

That’s as far as I’ve got! I’m 38+6 weeks pregnant so advance planning isn’t to far!
