Healthy tasty food for the new year

Tell me about your favourite tasty and healthy recipes. Bonus points for quick, easy and cheap.

I’m suffering from junk overload and really need some tasty, lighter options with a heavy focus on veg (sorely lacking in recent meals).

I'm marking my spot as I want to eat much healthier next year and I'm craving avocado and looking for ideas of what to eat it with. I love avocado with mozzarella and tomatoes but usually with bread of some sort

Marking place. I've decided to add a bag of stir fry veg to the weekly shop. Easy, quick, can add whatever flavours we like.

Veg soup once a week - pea soup, carrot soup, mushroom soup.

And generally doing two or three veg as side dishes rather than one, and larger amounts so I can have more!

I'm not vegan but I love deliciously Ella's recipes. You can get loads of free ones on her website. I love things like lentil or chickpea curries. So full of flavour, filling and nutritious. If you're interested you can just Google and loads of good re ioes come up. I also love tortilla wraps with hummus, roasted veg and halloumi. Delicious

Jamie Oliver's 7 veg pasta is great (based on butternut squash).

Yesterday I softened an onion, fried cumin seeds, ground coriander and sumac, and fried shredded red cabbage with a handful of tinned chickpeas. Delish.

Oh following for ideas. Trying to eat as healthily and cheaply as possibly in January.
One meal we have regularly is oven baked in foil frozen fish, normally cod. With roasted veg- courgette, peppers, onion. With a pack of couscous. Yummy and so easy!

Steamed Broccoli with stir-fried chilli, ginger and soy sauce
Green beans with lemon juice, olive oil and sesame seeds
Butternut squash and onion roasted with olive oil, salt and pepper. Dressing made with tahini, lemon juice and enough water to make runny honey consistency
Brown rice with fried mushrooms, peas and black pepper

Dahl with fish or on its own. Cheap and healthy.
