How can I recreate a dish from Las Iguanas?

Would love to recreate the dish at home. Does anyone have the recipe?

Sorry don't know about that item but did recreate ximxim and tasted very similar, actually better

@AtleastitsnotMonday I tried one of those the other week (think it was the enchilada). Really not great - nothing like the restaurant food. Hopefully it was just part of a bad batch, but won’t be trying it again.

@kateandme I googled Peruvian cheese fondue but couldn’t find any Blush. Can anyone help?

What I did find though was this Mexican cheese fondue recipe. It seems fairly straightforward but does anyone know what I can use instead of lager?

I was about to suggest queso fundido. I use the Wahaca recipe, which has tomatoes rather than potatoes. You could use wine or vermouth instead of the lager, if you have any. Or if you want it to be non-alcoholic I'd use stock.
