Loads of mushrooms, peppers & sweet potato

but DH doing low carbs....what can i do ?

they need cooking today !

I would cut them all up into bite-size pieces and roast them with some olive oil, then mix them up with couscous. Delicious! If your DH is determined to avoid carbs, surely he can make himself an omelette?

i could do peppers & mushrooms without the potato...do something else with that

I would fry / roast them all and make a frittata (beat eggs chuck in oven dish with cooked veg, bake in oven)

if dh can't eat the sweet pot just make him a small one without it

not Atkins , he is seeing a personal trainer and he is allowed porridge in the morning, and lean protein and non starchy fruit & veg, the rest of the time....

think frittata sounds good, and can do him a small on one side

i usually do sweet potato, roasted, with honey & brown sugar, cook it really slow till it caramelises, and it is his best thing ever !

Blimey, that sounds fattening - but delicious. I suppose it would be a bit mean to cook something he couldn't eat. You're obviously more benevolently inclined than me, food fads drive me NUTS and I would expect him to sort his own silly fiddly faddly meals out!

he has been quite good at cooking his own meals lately, but he is taking the children out for the day tomorrow, so i feeel i ought to do something nice for him !

In that case - you need to grill him a lovely chicken breast to go with his mushrooms and peppers - he needs to keep his strength up!
