What are you all putting in your freezer to feed people over Christmas?

I have four different sets of people coming from Christmas Day onwards, so along with the mountains of bedding etc, I will need mountains of food.
My thoughts are as follows for things to put in the freezer......Nigellas rolled pork with jewelled stuffing and port gravy (I have made this lots and it freezes brilliantly pre cooking), a beef casserole (slow cooked in mulled wine with shallots and carrots) but I'm having a blank on more things. I could do with two more proper main courses really.
Also, puddings that freeze well?? I will do a panettone bread and butter pudding, and I will have lots of homemade mince pies in the freezer, but is there anything else you can think of that's good? Oh, I could do a load of meringues, they keep for ages, don't they!!

meatballs which i will serve with spaghetti

gnocchi bake with tomatoes, basil and mozzarella

for dessert, im going to make cookie dough, roll into balls and place each ball in a cake case before freezing. then i can just pop them into the oven. i'm also going to make these strawberry cheesecake bites as they don't require baking, you can just take them out and serve.

all the best x

This venison casserole is extremely Christmassy and freezes well www.deliaonline.com/recipes/occasions/christmas/christmas-on-ice/braised-venison-with-bacon-chestnuts-and-wild-mushrooms-in-a-rich-madeira-sauce
Salmon en croute freezes well but you can only freeze it if you're using fresh salmon. Otherwise, a vegetarian Wellington such as mushroom or this www.bbcgoodfood.com/recipes/squash-blue-cheese-wellington
I'd probably also put some sausage rolls and mini quiches in the freezer for lunches.
If you've got enough room in your freezer, I'd definitely have an ice cream bombe! Cheeecakes are generally freezable. This one is easy but delicious www.bbcgoodfood.com/recipes/3419/tia-maria-cheesecake

A side of salmon rubbed with Indian spices and a squirt of lime (eg cumin, coriander, garlic, ginger, turmeric, thyme).

Cook 45mins-1 hour (or until done) in foul. Undo foil last few minutes.

Serve with rice or whatever you fancy.

I freeze trays of lasagne. It's great because you can slow cook them for hours and hours.

Make a Pork Pie and put it in the freezer raw, then take out and defrost and cook the day before you need it. You can freeze a cooked pork pie but the pastry goes a little soft.
Otherwise, make a pie with left-over turkey and ham from Christmas Day.

Nicked that gnocchi one, ta!

I’m cooking a GF cheese and onion quiche now, and tomorrow have a bake fest including

GF Brownies
White forest roulade
Sausage rolls
Mince pies

And chicken liver pate but not freezing that, putting that butter layer over the top so it keeps two weeks in the fridge.
