Favourite vegetarian Xmas dinner ideas

My dd2 has been vegetarian since age of 8(nearly 15 now) and for last three years we have all eaten vegetarian Xmas dinner as no one likes poultry and youngest can't have dairy,D's has texture issues regarding anything too chewy
They love roast parsnips,potatoes,onions and sprouts.green beans and carrots,stuffing balls and vegetarian sausages
