Veg heavy winter warmers, casseroles, stews, one-pots please!

Someone asked on here a few weeks ago for soup recipes and they were amazing!

I'm pretty good on soups, and can make one or two decent curries. I was looking for some suggestions of good warning winter-fare. Lovely casseroles packed with root veg etc.

What are your go to tasty one-pots?

I've got a Sophie Grigson bean stew that I just found the recipe for again, I used to make it all the time. I'll post it later when I've crawled out of bed.

I like a Tuscan bean soup, but I particularly like Gino chef chap soup with stale bread - it’s very thick and much more like a casserole, the fennel is the secret ingredient that really makes it for me. Authentic Moroccan recipes (not bbc/Jamie oilyver versions where it’s just full of harrissa or mint)

Lentil stew


2 cups brown lentils (or green lentils)
1 carrot chopped into 1cm pieces
2 or 3 large, ripe tomatoes (blended)
1 medium onion (chopped)
3 to 5 cloves of garlic (finely chopped or pressed)
Fistful chopped fresh parsley and corriander
2 1/2 teaspoons cumin
2 1/2 teaspoons paprika
1 1/2 teaspoons ginger
1/2 teaspoon pepper
Optional: cayenne pepper (to taste)
2 teaspoons salt (or to taste)


Add 2 litres of water and cook in a heavy bottomed pot, lentils tend to catch to keep and eye. Summer till lentils are soft but don’t stir too much or they’ll go mushy. Reduce if it’s still too watery after 40min

Was suggested to me on a thread about what my vegetarian option should be when I did a ‘come dine’ thing. Went down a storm, had to stop the meat eaters troughing too much.

Yes veg heavy but doesn't have to be vegetarian. Thanks for the suggestions, I'll definitely be trying them out.

We use the slow cooker and don't stick to recipes but will tend to load any of the following recipes with swede, carrots, celery, onions and/or lentils to both bulk out, veggie goodness and add depth rather than strong flavour.
We like: meatballs and tomato; pork and chorizo, turkey and leek, chicken and cider, beef and ale.
Because it's slow cooker it's different every time, plus will play with spices and herbs like ginger, paprika, soy sauce, garlic, rosemary. Adding cream at then end can also change to a nice creamy version.

Easy beef stew, no exact quantities as I improvise! No browning either
Oven on about 170c

Fry off chopped pancetta, add chopped onion, carrots, celery, mushrooms and two bay leaves until soft. I tend to do some small chunks and keep some large so they stay whole
Add a pack of diced beef (fatty stuff is good), a tablespoon plain flour, a tin of tomatoes, and a can of beer/Guinness/glass of wine
Oxo cube and pepper
Stir, and make sure there's enough liquid to cover everything
Put a lid on, bring to boil and then stick in oven for around 3hrs, remove lid half an hour before end, and bay leaves before serving!

It's the nicest beef stew I've ever had and you can add Lea and perrins, wine, whatever you have

This veg chilli is yummy and pretty quick to make. Of course you could add meat if you wanted, but it would need to cook properly. Chicken might be tasty...

Vegetable chilli (serves 4)

2 courgettes, sliced thickly
2 red peppers, chopped
250g mushrooms, chopped
1 aubergine, chopped
1 onion, chopped
400g tin chopped tomatoes
1 tbsp tomato puree
400g tin kidney beans, drained and rinsed
400g tin borlotti beans, drained and rinsed
75g sweetcorn
4 tbsp tomato ketchup
1 tsp dried mixed herbs
½ tsp hot chilli powder
1 tsp nutmeg
1 tsp ground ginger
½ tsp cayenne pepper

  • fry the vegetables until soft
  • add other ingredients and simmer for about 5 minutes

Jamaican inspired vegetables and beans (serves 6)

1 litre vegetable stock
2 onions, chopped
2 bay leaves
2 tsp dried thyme
2 red chillies, chopped
2 green peppers, chopped
4 carrots, cut into batons
1 butternut squash, peeled and diced
2 sweet potatoes (~300g), diced
2 parsnips (~360g), diced
2 tbsp tomato puree
2 x 400g tin kidney beans, drained
4 tbsp coconut milk powder
3 tbsp soy sauce

  • bring the stock, onion, bay leaf, and thyme to the boil in a large saucepan, and simmer for 15 minutes
  • add the chilli, pepper, carrot, squash, sweet potato, parsnip and tomato puree, and simmer for another 20 minutes, until vegetable are tender
  • blend the coconut milk powder with the soy sauce to make a smooth paste, and add along with the beans. Season well and serve with rice, or bread.

Creole style chicken stew (serves 4)

Chicken breasts or thighs, cut into chunks
3 onions, chopped
2 cloves garlic, crushed
4 sticks celery, chopped
2 green peppers, chopped
2 courgettes, chopped
2 x 400g tin chopped tomatoes
1 tbsp malt vinegar
1 tbsp Dijon mustard
2 tbsp tomato puree
½ tsp tabasco sauce
1 tbsp molasses or brown sugar
½ tsp ground allspice
2 tsp dried basil
1 tsp dried thyme
6 spring onions, finely chopped

  • fry the chicken chunks until golden
  • fry the onion, garlic, celery and peppers with the chicken for about 15 minutes, until softened
  • add the courgettes, tinned tomatoes, vinegar, mustard, tomato puree, tabasco, molasses, allspice and dried herbs, bring to the boil and simmer for around 15 minutes, adding a bit of water if it it gets too thick, till the chicken is cooked through properly.
  • season to taste, and serve topped with the spring onions


If you can't get hold of molasses, use black treacle. I've also used honey when I had neither, but had to "oomph" up the savoury-ness with a dash of marmite to balance it. It all depends on how you like it to taste!
