25kg of potatoes.....recipes please!

My MIL has very kindly brought me a LOT of potatoes. I am an expert masher/roaster and so will of course be doing the obvious with them. Does anyone have any more creative ideas or recipes that call for a lot of potatoes?

I don't think you have enough for all of these but if you use them quickly she might bring another sack!

I mash with both butter and milk and freeze in portions then store in freezer bags.

I mash without milk or butter before freezing so that I can change my mind and add different things after defrosting: also prevents crystals in the mash.
I pack into ziplock bags and smooth flat for easy freezer sacking (approx. 1lb per large bag) then I can crack off what is required and the bag resealed. You need to bang it on a worktop to crack it though Smile

In a paper sack in the garage they will keep for months so no need to rush to use them.

Oh really,BrookCreek? Mine are in a paper bag in my utility room, that's good to know.

they keep for weeks/months if kept in cold+dark+dry. No rush to consume.

I guess we buy a new 25kg back every 6-8 weeks. I love spuds, though.

Why don't they package the smaller bags of potatoes in paper too, I wonder? My usual 4kg bags would always start sprouting if I forgot about them.

Farm shops sometimes have 5kg bags in paper.

I buy a 25k sack from the farm and they keep perfectly well. If I ever buy supermarket potatoes (or any other veg actually), I immediately empty them from plastic bag and store in a paper bag. Tesco's home delivery use brown paper bags for loose veg.

Bacon and potatoes layered in a casserole dish with chicken stock. Oven cook for a couple of hours. Simple and delicious winter comfort food

I like to peel the potatoes then dice them to 1/2 inch cube size and place in a bowl and sprinkle with 1 tsp olive oil and salt and pepper and usually a seasoning-minced garlic or Lowery’s seasoning or paprika and place on a silicone baking mat on a baking tray for 30 minutes at 375 degrees Fahrenheit (I’m an American)
