CBA to cook

Oh good grief I've lost my cooking
Mojo and can't be arsed to cook at the moment. But I have 2 dc who need food.

I need inspiration with some super quick, easy and reasonably nutritious meals please MN'ers!

They aren't too keen on meat, salmon or chicken - they do like white fish, prawns and broccoli.

Save my lazy lagging soul.

Lemon pasta?
200ml good olive oil, 200ml fresh squeezed lemon juice and a bit of the zest in too and whisk in enough grated Parmesan til the sauce is thick.
Pour over al dente Linguine and mix it in a bit.
Serve with Caesar salad.Smile

What about a big pot of thick, rib-sticking veg and barley soup with crusty bread? Just whatever combo of veg you have to hand.

Bean and veg chilli, dahl, fish or veg curries, kedgeree, risotto, spanish omelette, make your own veg etc topped pizzas...

Prawn pasta is a doddle, ditto prawn curry..

White fish is lovely in curry (use commercial paste of your chosen spice level. large chopped onion and veg of choice then add can of coconut milk, cook for 5-10 minutes then add fish for 5 more mins, done)

I've got some pumpkin soup on. I cooked whole seeded pumpkin stuffed with garlic when I roasted a chicken last night, used carcass to make stock, combined skinned cooked pumpkin and garlic with stock. Just need to season and blitz.

That fish curry sounds good - I've always avoided cooking with fish but I could handle that.

We all like prawn soft tacos, salad etc and dd makes the guacamole Grin

Really hard to find meals we all like. Dc have opposite tastes. I've been doing Division of Responsibility which worked pretty well and certainly improved my diet, but I've reached a point where I'm finding it a massive effort to cook. I'm Sure we all have ruts like this.

Roll on half term when the kids are with their dad for a week and I don't have to cook for ages!

Well it was at the end of a weekend when I pretty much let the dc fend fir themselves, heated a pizza and had a Chinese takeaway. I never get takeaways.

We had edamame noodles (from Asda) a jar of pesto, cheese and broc tonight. Oh the effort that took! ShockGrin

Think I might need a few early nights.

Oven baked risotto with broccoli/peas/asparagus?

Garlic prawns with quick noodles, add some frozen spinach/pac-choy/peas to the noodles.

Bake mixed Mediterranean vegetables in the oven, for the last 15-20 minutes add sea bass fillets in a foil parcel.

I’ve introduced Pizza Night for Thursday nights......just a frozen pizza but it takes the edge off cooking.

This week we are having

Spicy chicken and potatoes with rice
Mexican fajitas with guacamole
Rotisserie chicken with jacket potatoes and salad
Pizza night 🙄
Sea bass with fried potatoes and vegetables

That’s all I can think about for now.

I just saw a recipe to make fried rice using packets of Uncle Bens rice - sounds quick, minimal and tasty. Will try that.

ooh I love that vege haggis but I don;t have a microwave so it takes ages to cook. Kids won't touch it though.

Not in the same theme as your thread title, but have you seen the recipe for haggis soda bread? Looks amazing.

Can you heat vegetarian haggis by shallow frying slices of it, that would be quicker than oven baking.

Get the McSween veg haggis from Tesco. I reckon you could boil the shrink wrapped slices.

I loosen the haggis and cook in oven. It takes hours to steam.

Yes. Do you live in Scotland? Tesco stock it. I swear it is divine. Id send a link but don't know how. Look up McSween veg haggis. They have 2 round circle slices shrink wrapped for £1.50 . Coop does them for £1 sometimes. I reckon you could boil it in 5 minutes or less.

prawn and salmon(use white fish instead)tagliatelle cook some tagliatelle.meanwhile cook in half butter half oil some onions and garlic.add some spring onions lets soften.add some white win some stock and cook a little add prawns and fish. add cream and crème fraiche stir through pasta.yum.add chilli if wanted but we don't with the kids.
mac and cheese with broccoli and bacon through or broccoli and tomato cheese pasta.
broccoli is great in curries. and cauliflower and veggie curry.
pork with one of those pour over knor sauces.
white fish with a mix of breadcrumbs and salt and vinegar and herb crust.
sausage and bean casserole
fish baked rice.
