What to do with mackerel?

I have 2 packs of mackerel after a substitution on my home delivery order. Originally I had ordered Basa fillets and was planning on making fish burgers.

However, I have never cooked with
Mackerel before and I would like to try something new. Does anyone have any ideas? What do you do with it?

DH catches mackerel sometimes when he goes sea fishing. We just have it on toast! Brown bread and lots of butter!

Otherwise, I think it's meant to go well with something that can cut through the oilyness, like beetroot.

I like it made into fishcakes - either Thai style ones with chilli, ginger, lemongrass etc or normal ones with potato
As it has a stronger flavour you can also use it with other strong flavours like spices etc - so tikka or teriyaki mackerel or brush it with harissa and bake.

I like it in kedgeree, rice, egg, mackerel and some spices. Usually chop some tomato through it after cooking to add a bit of colour Smile

Fresh grilled mackerel is delicious - with a soy and lime marinade that cuts through the richness of the fish. Try it on the BBQ.

Very nice pan fried then served with a gooseberry sauce.

I like this recipe: Oat coated mackeral which also has the advantage of being very quick and easy.

Ooooh, mackerel is ultimate fave fish! I use it in a stir fry most often but it also very nice flaked onto scrambled eggs on toast with some chopped coriander and fresh sliced baby plum tomatoes.

I don't have a recipe for this but mackerel pate is very nice spread onto toast with some thin sliced radish on top.

Or sometimes I just have the fillet whole, with a baked potato and some other veggies. Nice and simple.

Two nicest things to do with mackerel:

  1. BBQ or chargrill them on a fierce heat either under a grill or on a griddle. The skin should turn crispy and slightly smoky. Serve it with home made gooseberry sauce - stewed gooseberries (in own juices - no added water) with a bit of arrowroot to take out the acidity and maybe a tiny bit of sugar, drop of elderflower cordial or honey, then sieved and reduced to a puree.

2.) Take pre-cooked (ideally on a smoky BBQ) mackerel. Skin and debone it, then mash it with full fat cream cheese, a bit of melted butter, lemon zest and juice, a sprinkle of chilli or paprika and black pepper until it is a soft blend. Line a bowl with cling film. Put it in and chill in fridge until more solid. Turn it out and serve with oatcakes. Yum. My sister makes it with mackerel her husband catches and smokes himself. It's the best food in the world. She even makes her own oatcakes.
