Please help with low carb meals

My DH is obese and his blood sugar is too high. He is now trying to lose weight by following the low carb diet. We have been eating cauliflower rice and courgetti (spaghetti made out of courgettes) but I need more inspiration. I've looked on pinterest but so many meals are dripping with too much cheese for me.

Please, can you share your healthy low carb dinners with me?

Stirfry Prawns in sesame oil add garlic.
Chuck in Broccoli mushrooms Shredded cabbage (anything really) finish with soy sauce and sesame seeds. I use Oodles low carb Noodles in this too.

Make a rich beef stew. Fry onion garlic leeks carrots paprika etc. Add the beef and brown. Add stock and a Tinned tomato and Tom puree. Add chopped mushrooms and leave to stew. Serve with Shredded cabbage.

Shredded fried cabbage I mean. Savoy is best. Cook on high heat with oil until it starts to brown. Add a dab of butter and pepper.

Spicy beef tacos (without the taco) fry an onion and garlic add a teaspoon each of chili powder (mild or hot depending on tolerance) cumin and Paprika. Add oil so the spices make a paste with the onions in the pan cook for 30sec. Add beef Mince and brown. Add beef stock cover and simmer to reduce the liquid. Serve this with salsa (chopped tomato, onion garlic fresh Coriander lime juice) Sour cream, grated cheddar and salad leaves. Or roasted sliced peppers.

Fish on couliflour bahji.

Use Mackrel or salmon.
Roughly dice up whole couliflour sautéed in pan with olive oil add chili powder. Cook until slightly softened but still firm. Add the juice from half a lime. Remove from pan. Heat pan and pan fry the fish as you like. Serve with fresh spinach.

Yes he still eats carrots, doesn't like butternut as much, but he'll eat it just fine if I put it in front of him.

There are loads of recipes for shepherds pie and fish pie topped with cauliflower mash such as this one uk.atkins.com/get-inspired/recipes/shepherds-pie.html

Celeriac makes a good mash and there's a BBC recipe for pork chops and apple with celeriac mash and ale gravy. It also goes really well with fish www.bbcgoodfood.com/recipes/1681/salmon-with-mustardy-celeriac-mash

The reason I asked about butternut was because there are lots of lovely recipes for stuffed butternut www.weightwatchers.com/uk/recipe/stuffed-butternut-squash/5625c085d9d5bb09345738a4

Sainsburys has a good selection of carb alternatives such as butternut lasagne sheets, butternut noodles and butternut crinkle chips. There's are recipes ideas for these on their website.

We eat a lot of baked/grilled/fried meat/chicken/fish with large portions of salad or vegetables. Are you eating beans? Bean mash is fab if you want something carb-like.

Piles of roasted veg, served with goats cheese.

Soup? But can feel unsatisfying without carbs.

Also do a lovely v vaguely Asian I soured mince - fry onions until soft in a little oil (add water of nevèsary rather the using a lot of oil). Add mince and fry until nicely browned. Add some chopped garlic, ginger and chillli. Lots of soy sauce and lime.juice. tweak flavours until right.

Serve with large lettuce leaves (gem lettuce work well), with extra lime/chill oil as preferred. Key to deliciousness is to add something sweet - grated apple to thin sliced watermelon work well. I also like to add some feta. But can do with spring onions and cucumber.

Very satisfying and healthy if you use low fat mince and avoid adding too much oil while cooking.

Frittata (without the potatoes)
Stuffed aubergine with mince and topped with a little cheese - serve with mixed veg
Lasagne made with slices of courgette instead of pasta
Risotto made with celeriac rice - my favourite is roast chicken
Fish pie made with mashed cauliflower/celeriac as a topping
A full English - but grill the bacon/sausages
