Vegetarian Indian food

We have been invited to a birthday party next week. There will be lots of people coming. Everyone is asked to bring a dish (it’s basically a Indian potluck dinner). It will be held in a house indoors as it will be evening then. I’m completely clueless.

Can anyone recommend any vegetarian food? The only option I can think of is vegetarian spring rolls. Thank you very much. Preferably either a cheap option from the supermarket or something that is easy to make at home to take.

Loads of Indian food is easily vegetarian.

Samosas
Naan bread
Onion bhajis
Vegetable pakoras
Poppadums

Or if you’re wanting to take a main, lentil dals are very cheap and easy to make.

This is my favourite dal. It can be made in 20minutes from start to finish. I use frozen spinach (or leave it out).

Mattar paneer.

So easy to make and people will love you for it, as it’s delicious. Loads of recipes online or pm me if you want my recipe, which is obviously the best Smile.

Spring rolls aren’t Indian btw!

Aloo mattar (potatoes and pea), is amazing too. DP loves this and whenever I don’t know what to make on my cooking night he asks me to make it, it’s straight forward and delicious, I serve it with chappattis, you could serve with naan bread or chappattis from super market or similar.

Have you got a particular recipe you use fuzzy? It’s a favourite of mine. I like the one from Iceland’s take away range! Grin

Definitely paneer of some sort.

Nigella's mattar paneer is good, or the butter massala from Fresh India.Both as good as anything I've ever had in an Indian restaurant (add more spices if you do the Nigella).

I use this one usually. Sometimes I throw in left over baby spinach too for extra iron.

It tastes even better the day after (there usually isn’t any left tho).

If you fancy treating yourself to a cook book, Made in India: Cooked in Britain is fab. I use it a lot. There's tons of veggie recipes. The paneer and spinach curry is fab.

Sadly the paneer in the UK is pretty rubbish unless you have a good Asian store that does their own.

However, you could get away with it if you disguise it in a sauce! But there are loads of Indian veg recipes you can try.

Have they specifically said it's got to be Indian food only? Spring rolls, a nice salad, pasta, lasagna, dessert (do check if eggs are ok though)...options galore!

Lol . One of the easiest foods with lots of veggie dishes. You'll be fine

Pakora
Samosas
Sag paneer / chickpeas with paneer cheese and spinach

Dahl
Chapatis
Bombay potatoes
Vegetarian bhuna, balti, madras, jalfrezi

A good chickpea and spinach curry is cheap and always tasty I can send you a recipe if you'd like but can't bothered to write it out if you won't use it. ( I mean that I'm the nicest way)!

Please don't cook the one above that takes ten minutes. Curry cannot be made so quickly.

Paneer is actually very easy to make but I didn't suggest as you did say easy to make and i wouldn't class an easy dish as making paneer then making a saag paneer or matar paneer.

I would really recommend saag paneer though you would be loved for it.
