What to do with green lentils?

Douse in a Lemony, peppery dressing while they're still warm, and add in watercress so it wilts a bit.

Serve with goats cheese and roast veg.

Google BBC Good Food 'Lincolnshire Sausage Simmer'

I use them instead of mince in chilli non carne and bolognaise.

Also lovely is a fillet of salmon served on a bed of green lentils, green beans and a honey/mustard dressing. Copied this from a Prezzo dish back in the day!

I agree with a pp. Use them as you would mince.

One thing I like is boil some, meanwhile make a basic ragu. Then fry off some courgettes and any other veg. Once the lentils and the ragu are ready mix it all up in the frying pan. Make four dimples and crack an egg into each one. Continue to fry for a bit then cover with cheese and stick under the grill.

@Ricekrispie22 They are dry green lentils and have been told to soak overnight but then they start sprouting Blush. I must be doing something wrong.

They don’t need soaking. Just cook them. Sprouted lentils are lovely though. Pop in a salad.

This is yummy. I don't pre-soak the green lentils.

Lentil tagine (serves 4)


2 onions, chopped
3 cloves garlic, crushed
2 tsp freshly grated ginger
1 tsp ground cinnamon
1 tsp ground cumin
½ tsp cayenne pepper
400ml vegetable stock
100g green lentils
100g red lentils
2 red peppers, chopped
3 carrots, chopped
3 celery sticks, finely chopped
225g sweet potato, peeled and chopped
400g tin chopped tomatoes
juice of 1 lime (~1½ tbsp)
handful chopped fresh coriander

  • fry onion for 10 minutes, until beginning to soften
  • add garlic, ginger, spices, green lentils and stock, cover and simmer for 20 minutes
  • add red lentils, vegetables and chopped tomatoes, and simmer for a further 30 minutes
  • stir in lime juice and fresh coriander, and season to taste
