Batch packed lunch ideas

New term new start - I want to make efforts to take lunch with me to work - to save money, be healthier, eat less bread etc etc. I know myself too well to aim too high - I need simple recipes that use simple ingredients, and I think making a big batch on a Sunday night seems like a good plan. I'm thinking rice / cous cous / beans. Ideally avoiding pasta as I eat too much of that too.
Anyone got some suggestions? Flowers

Vegetable/lentil soups, if you have a microwave? Really easy to batch make.

I did get into the habit of roasting a selection of vegetables on a Sunday night and using them as a base for a week's worth of salads. The veg would vary based on my mood and the time of year but favourites were aubergine, courgette, peppers, parsnips, carrots, butternut squash, sweet potatoes.

I'd add some salad leaves and probably some grains, either left overs, cous cous (because it's quick) or pre-cooked ones (I think merchant gourmet does quite a selection).

Lastly some protein. Leftover roast chicken, hot smoked salmon and feta cheese were favourites.

Enough options for it not to get boring but formulaic so it's easy to throw together on a Sunday night. I need to get back into the habit as it's much healthier than sandwiches.

One of my favourites is green/brown lentils with celery, mixed seeds, spring onions and feta-dressed with olive oil and lemon juice +- leaves.
Another is cous cous, chick peas, peppers and onions.
Greek salad ?

Grated carrot, beetroot and sesame seeds (again with feta).
Leaves with avocado and walnuts ( not a batch cook thing)

I do a version of Nicoise salad - leaves, cooked green beans (or asparagus/sugar snaps/broccoli), cooked new potatoes, a hard boiled egg,cherry tomatoes, tinned tuna (or salmon) - you can add too but olives but I'm not a fan - then i take a tub of dressing to add just before i eat

Another favourite is roasted veg (carrots, beetroot, aubergine, peppers, courgette) with some leaves, a little bit of couscous and falafel

I make pre flavoured cous cous (Ainsley Harriott) then add crumbled feta and cucumber.

Zucchini slice - take a couple of slices a day

I do a salad with brown rice celery red pepper sunflower seeds currants and a dressing of oil soy sauce garlic sesame oil and lemon juice which is yummy.

Also roasted sweet potato tossed in balsamic on a bed of spinach leaves with olives and feta

I read on here once that you can freeze sandwiches and just take one out each morning. Never tried it though 🤷🏼‍♀️

Catinboots - I used to make whole loaves of sandwiches to freeze when I was in sixth form (centuries ago) - they'd defrost by lunchtime, but tended to be a little soggy and you couldn't make them particularly interesting.

I’m currently trying to cut down on carbs and up the veg to lose weight.
I have beeen making a huge baked omelette in a rectangular baking pan, which is easier to portion up for taking to work lunches.
Favourite so far: 2/3 egg, 1/3 egg white (from carton if need be), handful of grated Parmesan, basil or oregano and seasoning. This is poured over dry-fried red pepper, mushroom and some wilted and dried baby spinach. Top with crumbled feta and halved cherry toms. Bake 180c for around 20 mins.
I did love to try more soups too.
