Family veggie meal ideas needed please!

Hello, can anyone share their favourite vegetarian meal ideas please. Need some inspiration x

I'm not vegetarian but one of the tastiest meals a vegetarian friend cooked for me was boiled eggs in cheese and leek sauce topped with mashed potato. Still make it for a change every now and then.
We also make a vegetarian lasagne with roasted aubergine, courgettes and peppers in a tomato sauce

I eat loads of veggie curry, chilli and pasta bakes. Halloumi, roast veg and cous cous with a spicy tomato sauce is really popular here.

The bbc good food website is great for ideas.

Curry, chilli, pasta bake, Sunday (nut)roast, pie & mash, lentil bolognese, lentil/veg mince cottage pie, moussaka.

I like tarka dhal with rice, pesto pasta (the veggie pesto), lentil spag bog, gnocchi with tomato sauce and mozzarella

Tofu pad thai, fajitas/burritos/enchiladas, mac n cheese, lentil 'meatballs' & spaghetti, gnocchi in cashew cream sauce (cashews & tomatoes blended), homemade Sushi rolls, you can make nice veg spring rolls with rice paper as a side to a stir fry.

Our favourites:

Veggie Pot Pies My meat eating friends haven't actually sussed that this is a vegetarian dish.
Peanut Soup This is teen dd's favorite meal in the entire world. We've used all sorts of greens in it, and she prefers it with quinoa rather than rice.
Tortellini soup Another soup favourite.
Crispy orange ginger tofu One of the only ways I actually like tofu.
Seriously good black bean burgers

This is really nice! Piri piri instead of Cajun spices also makes it a million times better 😁

We are going for 'less meat' here, so my repertoire of credible veggie meals is expanding slowly:

  • veggie lasagne, usually with spinach & ricotta & tomato sauce
  • red dragon pie, basically shepherds' pie with aduki beans instead of mince
  • this mushroom cobbler with a mustardy topping


Also, pink pasta or any of the other eleventy-billion ways with beetroot!

Dhal (in all its forms but special shout out to black dhal)
nigel slaters mushroom and spinach lasagne
Nigella's stuffed pasta shells
Anna Jones' black bean tacos
veggie chili
matar panner curry
anything from Fresh India

Vegetable paella
Pasta Prima vera or pasta Siciliana
Frittata
Quiche, cheese & leek or broccoli & spinach are favourites.

Coconut satay curry with chunks of butternut squash, red pepper, whole babycorn and sugar snaps in it.
Home made pizzas with peppers, onions, mushrooms, sweetcorn and mozarella on tomato sauce
Veggie chilli and rice. If they hate minced Quorn, just chop up the usual peppers, onions, courgettes with some very finely minced carrot, garlic and celery, fry, add chopped tomatoes, seasoning and two cans of kidney beans
Eggs, chips, peas and peas
Frittata with salad
Pasta pomodoro
Pasta all'Arrabiata
Baked potatoes with grated cheese and beans or with herby garlic cream cheese, or left over veggie chilli and salad
Minestrone - thick tomatoey soup with tiny pasta shells, haricot beans, green beans, peas, red pepper, carrots onions, spinach and grana padano stirred into it. With crusty bread. We had that last night.

Was going to post a few recipes as a vegetarian ot over 30 years with two DC raised the same, but there are thousands of lovely recipes online that you can browse through.

There is so much variety - it really depends on how confident you are to try new things, how skilled you are as a cook, and what your family likes.

I’m afraid boiled eggs in cheese sauce with mashed potato would be a big fat no from me.

Spanakopita is the food of the gods I miss it so much.
Pastas: lentil Bolognese, fajita pasta, veggie sausages with spicy tomato sauce, chickpea ragou, with grated courgette with chilli ans garlic, with pea purée, roast aubergine, puttanesca with caper instead of anchovies, mac and cheese.

Rice: risottos, paella, Mexican spicy rice, fried rice dishes, byriani.

Curry’s: chickpea and spinach, Dahl, paneer and pea, mixed veg, pea and potato.

Mexican: fajitas with portobello and pepper, mixed veg and bean burrito, bean and cheese quesadilla.

Middle eastern: falafel, hummous, baba ganoush, tabouleh, chickpea salads, tajine, cous cous.

Quick teas: bean burgers, jacket spuds, sweet potato wedges and salsa, nachos.

@lastqueenofscotland why do you miss spanakopita? It's easy to make if you buy ready made filo pastry. DH made it the other day. DC loved it. Forgot to add it to my list.

I do a macaroni cheese x broccoli/cauliflower cheese hybrid with whole grain mustard in the cheese sauce.

Cool the broccoli, cauliflower and pasta mix through a cheese sauce (with about 2 heaped teaspoons on whole grain mustard added to it), add extra cheese - pile it all into an oven dish, sprinkle over peri peri seasoning and brown off under the grill. It’s a huge hit with all our family.

Paneer kebabs - rub curry paste onto cubes of paneer and chopped veg, thread onto skewers and grill. Serve with rice and dhal

Egg fried rice is also a massive hit here. You can add a handful of cashews for extra protein.

I started a similar thread a while ago and there were lots of great ideas there.

I also recommend Amuse Your Bouche - lots of recipes! I made the halloumi fajitas the other night and they were lovely!

@FairyLightFiend Yes it is. It's really quite delicious. Although, don't ever substitute tomato ketchup for tomato paste out of desperation if you find halfway through that you're out of tomato paste. The end result will be horribly disgusting and even the dog won't eat it.

@lastqueenofscotland I make a vegan variant of spanakopita with fresh spinach, roasted or fried onions, sun dried tomatoes, pine nuts and a bit of chilli. It's worth a try.
