Help needed please if you are familiar with Nigella's Raspberry Bakewell Slice

She says to bake it for about 45 mins, testing after 35, "it is ready when it is risen with gentle puffiness and has become tinted gold from the heat"

Problem is it was tinted gold after about 20 mins and was runny inside.

Kept putting thin knife in to check and the "batter" was still wet and not set

As it was after 35 mins and then only a little more set after 45 mins although much darker on top than she described.

I've taken it out but who knows?

She didn't mention anything about putting in a skewer and testing the set.

Arrggh - the raspberries were expensive - will be cross if it is over-done.

for "batter" read almond filling that goes on top of jam and raspberries

Anyone? I suppose it is a bit niche!

Turned out burnt on the bottom and top and very slightly underdone in the middle! Height ho; going for bog-standard Bakewell next time ... .

Sounds like your oven temperature was wrong. Possibly too hot? Sad

Yes that's a distinct possibility Cloud as it has one setting; cremate! Grin

I did cover it with foil Really, after about the first 25 mins.

I'm a huge Nigella fan and when her recipes are good; they are really good and I tend to cook them again and again! But when they are bad ... .

This one was really disappointing. But could be down to cook's error.

Yeah flavour is not bad actually Sealsong , if you ignore burnt base! It's sort of sweet and slightly sour at the same time.

Burnt base and top browning before middle was set - oven temp was almost certainly too hot. Can you get an oven thermometer to see? Or is it possible you were using a fan oven but set it to the non-fan temp?

Thanks Xiaoxing yes I think that must be it actually from what you and pp have said. It's a semi- industrial gas oven - great for roasts - but not so good for baking unfortunately.

Well no wonder the frangipane was runny . The 'stuff in the middle' that is. You kept opening the oven. Not allowing it to bake

Definitely too hot an oven temp. I’ve made this a few times, and timings in recipe were pretty accurate, maybe 5-10 mins more. Don’t be put off trying it again, it’s a delicious recipe
