Vegetarian family dinners

Hi,

My husband and I are cutting down on meat but I often struggle to know what to cook for dinner! I've been converted to Quorn and enjoy the mince in bolognese, lasagna etc. I also like Linda McCartney sausages and her other bits and bobs. However, I realise that these are meat 'replacements' and aren't particularly cheap!

What are your staple veggie dinners? What veggie dinners do your kids enjoy eating?

These are favourites here, and the meals that we all enjoy (DP and I often eat later). We're all veggie - 2 adults, 2 primary-aged children:

Pasta with homemade pesto (I blend/mash in extra green vegs) and parmesan.

Pasta with a basic tomato, onion and garlic sauce.

Carbonara (replacing the bacon with mushrooms).

Pittas, hummus, falafel and salad.

New potatoes, veg burgers (bought or homemade) and vegetables.

Jacket potatoes with cheese and beans.

Spanish omelette.

Fried eggs with oven chips and peas.

Pizza.

Couscous with roasted vegs, olives and halloumi.

Homemade soup and bread.

Quiche and salad.

DD is fussier, but DS would eat veg chillis, curries etc. too.

Pasta with homemade pesto (I blend/mash in extra green vegs) and parmesan.

Parmesan isn’t vegetarian unless you buy a veggie version.

We have lots of curry with paneer, chick peas, butternut squash, quorn or eggs (or a mix of these) replacing the meat.

Chilli is great made with mixed beans and roast squash instead of meat.

Veggie sausage and mash.

Veg fajitas

The crispy Greek style pie on the good food website is fab.

Veggie sausage pasta (spicy tomato based sauce)

Roasted veg, halloumi and cous cous with Indian chutneys or a spicy tomato sauce

Family favourites

Bean burgers

Drain Tin chick peas, tin butter beans and smash in a processor or mixer.
Add chopped onion and sweet corn
Flavour with mint sauce &tumeric
Shape into burgers on a greased baking tray.( use a handful of flour if they are runny)
Bake 180 fro about 10 mins,
Add sliced cheese( halomi or feta or cheddar) and Bake for another 10 mins and serve with salad (and sweet chill sauce)


Mexican beans

Fry onions, chilli, garlic( and peppers if you want)
Cumin, turmeric, half a dozen tomatoes,
When soft Finally add
Tin black beans
Bunch of coriander and heat through

Serve with avocado, grated cheese, tortillas or nan bread

Lentil and cheese salad

Black lentils ( or tinned mixed beans) work best. Cook lentils up ( and add some spinach if you fancy)
Whilst cooking finally chop onion ( use spring onions if you prefer a gentler taste)and peppers and tomatoes and soak them in loads of balsamic vinegar and salt
And prep some couscous
When lentils are ready, put lentils and a little grated or crumbled cheese on the couscous, top with the salad mix and drizzle with a dash of lemon and olive oil ( or flavoured oil or sprinkle of fresh herbs)


Bean stew
Gently fry onions and peppers …use a bit more butter /oil than usual
Stir in tin mixed beans with liquid and whatever veggies you like ( spinach fresh or frozen is good, if it's carrots or such then grate them or be patient with the cooking time )
Flavour with ..mixed herbs and salt. Or cayenne and nutmeg..whatever ( you can do a meat version with a very small bit of chorizo)

Serve with Couscous or rice

Spinach and walnut lasagne

Instead of a meat sauce for lasagne , gently fry onions one or two tomatoes and garlic, stir in loads of spinach. Once it has vanished, crumble in walnuts. Flavour with nutmeg ( and dash of cayenne if so inclined) would

Or use the same mix with a little feta cheese on pasta or to make little pies.

currys are beautiful with cauli broccoli and green beans as the main features and don't miss the chicken at all
veggie packed stew with white beans.
lentil one pots or dahl
veggie fajitas.
veggie chilli
twice stuff jacket potatos cheesy leek version is yum
one pot rice
dauphinoise potatos
pasta bakes of every variety.
pastry veggie parcel
couscous and roasted veg with pin nuts
soups.

Curries - pea and paneer, chickpea, Dahl etc
Pasta - puttanesca with capers instead of anchovy, lentil and mushroom Bolognese, spicy tomato sauce with veggie sausages
Mexican: fajitas, quesadillas, enchiladas, I make nachos with thinly sliced sweet potato instead of chips.
Pies: spanakopita, Lincolnshire poacher, red onion and goats cheese tart

So many nice ideas.

My input

Chinese style fried rice - one pan, green beans, peas, brocolli, couple of table sooons of water, lid on and boil for 5-8 min. Add nut oil, onion, garlic and fry all together, with some 5 spice powder and soya sauce. If you eat egg, move all veg to the side, add whisked egg and cook it. Then chuck rice in and mix up. I add load of soya sauce as I love it.

One of my fave, quick, easy meals!

Also do my own salt and pepper chips - similar to the above, 5 spice and loads of garlic / chilli to taste and chuck in cooked chips. Seriously, so easy and dead nice.

Moroccan quinoa

Fry finely chopped onion, garlic, courgette, red pepper and carrot. Add 2 tsp of this, 1 tin black beans, 1 tin sweetcorn, 1 tin tomatoes, 1/2 cup quinoa, 1 cup stock, 1 tsp sugar.

Simmer for 20 mins. Serve with grated cheese.

Singapore rice

Fry chopped spring onions, ginger, red pepper, mange tout, and tofu chunks. Add 1 tblsp curry paste, 2 tblsp soy sauce, 3 tblsp sweet chilli sauce, 3 tblsp water and 1 cup rice. Simmer for 10 mins.

Chickpea curry, many recipes online and include sweet potato- to be honest I usually bake the sweet potat first otherwise I find it a bit firm

Onion flan - Deliha recipe and it’s delicious, serve with bake beans, greens, new potato or mash

We also like delihas broccoli soufflé, it’s a winner in this house

I made sliming world bean chilli last night for the first time and it is really tasty, certainly nicer than mince meat version
