Hopeless at dinner/lunch

I'm not a bad cook I can follow recipes and even go off book on a few of my own concoctions. I don't enjoy cooking though. My husband is allergic to soya. My son is allergic to dairy and I'm vegetarian. So it's not the easiest meal planning situation.

Anyway I go back to work after mat leave next week and I'm totally hitting a blank on dinner/lunch ideas for myself. I'm not a fan of sandwiches but will tolerate them a few times a week. Luckily I only need to plan my own lunches as dh is happy living of sushi (lucky git works in Manchester) and my ds is being spoilt by my dm.

PLEASE help a tired and flummoxed mum out. What the hell do I do for my lunches when back at work?!

Before I went on mat leave there was a canteen at work I'd have a crappy sandwich or salad. But that's not there anymore and I'm not in walking distance to anything when at work! Forgot to add that so I really do need to plan stuff Sad

I make an extra portion of dinner and take it to heat up

Soup and crackers. Chilli/curry and rice. Something your ds and dh can't eat... Macaroni cheese seeing as you can't have it at home?

Here are my work lunches:
A packet of the one-portion Tilda pulses range. E.g. www.tesco.com/groceries/en-GB/products/293226810 They're equally as nice cold or hot.
One of the one-portion crustless quiches e.g. www.tesco.com/groceries/en-GB/products/281640912 I heat it up if I feel like it, but more often than not I eat it cold with some green salad that I keep in a bag in the fridge at work.
Sometimes I take a jacket potato that I cooked the previous night and just reheat it in the microwave. I have it with with one of the small one-portions of tinned tuna in tomato sauce. My DH also takes a jacket potato and has it with a snap pot of Heinz beans because he doesn't like fish.

I live off feta cheese salad with balsamic! Plus fruit and a yoghurt
Sometimes I have egg mayo sandwiches and plain crisps

Do you have access to toaster/microwave?
Cous cous salad with roasted veg and feta
Green salad with celery, apple, Gorgonzola and pinenuts
Wrap with humous and grated carrots
Pasta with spring onions, peppers and sundried tomatoes
Sweet potato salad
