Mince help

I've some beef mince that needs using up. I'm stuck in a rut and sick of it frankly.

I usually make the usual suspects, shepherds pie, Bolognese, chilli, a keema type curry, meatball, kofta, burgers...

Is there anything else at all I can make with it. Anyone out there doing something fab with it ??!!

Why not chuck the mince in the freezer and have something different for dinner?

Dirty rice.

Fry mince onion mushroom courgette peppers....any vegetables. ...pour on stock....add tomato puree garlic chilli curry paste or powder. Add rice and simmer until fluid is all absorbed.

My lot like it dry fried in lots of spices and used as Make It Yerself wrap filling with a few salady bits and creme fraiche.

Or make some chilli but then put on a baking tray. Cover with plain tortilla chips and a generous quantity of grated cheese. Grill til the cheese is bubbly and serve with sour cream. Very naughty but delicious!

Savoury beef mince is lovely - serve with mash or in a Yorkshire pudding.
You can add any veg and/or pulses really.
I also make it more gravy-like by adding oxo etc. and decreasing the passata andcIncook it for longer too.

Basic recipe

Savoury Beef Mince

Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes
Serves 4-6 people

Ingredients

• 2 tablespoons olive oil
• 1 onion peeled and sliced
• 2 cloves garlic, peeled and chopped
• 500g / 1lb minced beef
• 2 carrots peeled and grated
• 2 sticks celery, finely chopped
• 1 400g can chick peas, drained and washed
• 4 tablespoons frozen peas
• 4 tablespoons passata
• 250ml vegetable stock
• 2 teaspoons worcester sauce (or similar)
• 2 teaspoons dried mixed herbs
• 2 bay leaves
• salt and pepper to taste

Cooking Directions

1 Heat the olive oil in a large, deep frying pan
2 Add the onions and fry gently on a medium heat until soft
3 Add the garlic and celery and cook for a couple of minutes
4 Add the meat, breaking it up and browning it
5 Add the carrots, chick peas, stock and passata
6 Add the worcester sauce and herbs
7 Add the bay leaves
8 Bring back to the boil and turn down the heat to a slow simmer
9 Cook for about 25 minutes
10 Serve with mashed potato, baked potato or rice and a vegetable or two
