Preserved Lemons

I bought a jar of preserved lemons at Christmas and they are still sat in the cupboard! Could anyone inspire me with a recipe?

Jamie Oliver used them in a Moroccan-style roast chicken recipe that I've made a few times and it's really nice

Stick them in a chicken stew and call it tagine.

Or chop up very small and add to butterbeans with loads of parsley

Tagine is obvious. But if you're looking for something more unusual try meatballs - chop finely and add to any pork and lemon meatball recipe (I use sundried tomato and parmesan too).

Google Fine Cooking, then morrocan lemon chicken kebobs. Substitute the preserved lemons for the real lemons in the receipe and then just use skinless chicken breasts and slather the marinade on. It is completely fabulous. I make batches of quadruple the marinade and freeze it. Its my favourite summer receipe

I add one, whole, to any fish stew or soup. Similarly to some meatball stews, if I use warm spices like smoked paprika, rather than green herbs.
Pierce a couple all over with a skewer and put in the cavity of a chicken and roast it.

If we’re having a roast chicken I sling a few in with the roast potatoes. Everyone fights for them.

Chop very finely and add to cous-cous along with olives and cucumber.

Chop and use as a garnish on cold poached salmon salad, or with smoked salmon, or any oily fish.

Use as a garnish for chilled pea soup.

I particularly like this one, although I find a jar will last for three or four quantities of it, so you might want to do some of the other suggestions too.
