Deep quiche/flan and interesting salad recipes please

Hi
I am planning a bit of a do for around 30 adults. I was thinking some nice deep savoury quiches and some interesting salads plus probably salmon and new potatoes etc. I have tried to find recipes for ‘deep’ quiches, but cannot find any. Does anyone have any tasty recipes please? I would also like to make 3 or 4 interesting salads if anyone has any good ideas. Thanks in advance.

Delia has several. I used 2 for my dc christening to great success. You make it in a sprung cake tin. I'll try to link but you can search her website too.

Try Ottolenghi’s “very full tart” recipe (big roast veg quiche, basically).

For salads:

  • Fattoush
  • Tabbouleh
  • Mix of edamame beans and peas and broad beans (buy them frozen if you like, cook then plunge into ice water so they stay nice and green, it is worth skinning the broad beans, they taste much nicer although it is a little bit of a faff) then to the cooled bean/pea mix add pea shoots and a little chopped spring onion and make a dressing from 2parts sweet chilli sauce to 2 parts soy sauce and 1 part veg oil (I use rapeseed), grated fresh ginger and salt and pepper to taste.
  • homemade coleslaw
  • roast tomatoes with garlic and olive oil and balsamic vinegar, sprinkle with torn basil

there are some lovely warm potato salad with bacon or chorizo
barley butternut squash and sage salad is a marvel
a nice pasta salad using those really small pasta
roasted veg with chickpeas and feta salad
smoked salmon spring onion potato salad.
cucucmber red onion tomato and minty sauce salad
steak roasted onion salad with mustard dressing
