Ideas for chicken breasts

I'm feeling uninspired, can omly think of chicken curry which it's too hot for! Kids aren't great for eating salad. Any simple tasty Ideas?

I’m doing chicken ramen with a pack of stirfry veg in it.

If you don't want hot food maybe a chicken Caesar?

Cajun chicken with wraps or flatbread and mint/cucumber yoghurt. Sweet potato fries are nice with this :-)

Were having home mad Nando's. Bought the seasoning, making some spicy rice, corn on the cob, coleslaw and halloumi.

Sticky Chicken.

Make up a sauce of tomato ketchup, honey, mustard, sweet chilli sauce (if they'll do a bit of spice - use 5 spice powder if they like that instead) and marinate chunks in that for a wee while.

Bake in oven till cooked and sticky.

As a word of advice, make sure you line the tray with baking paper if you ever want to use it again and / or prefer to wash up without a hammer and chisel.

Great with homemade chips and coleslaw.

Cut chicken into cubes, fry in sundried tomato, ad chopped sundried tomato , add spinach or beans or brocolli, mix with pasta

Chicken wrapped in bacon stuffed with cheese served with roast potatoes , veg/chips/sweet potato fries.

Butterfly the chicken so it's thin and marinade in olive oil, soy sauce, lemon juice and paprika and then griddle or fry. Eat with salad and sauté potatoes or baguette.

bashed chicken...butterfly or just slice it into a thinner layer, bash out with a meat hammer or heavy pan, then daub with mayo/soured cream/ketchup...anything savoury and saucey will do, and then press into crumbs....I use a wide variety of things from cracker crumbs to matzo to actual real breadcrumbs
if you are wanting to be a bit fancier then put some really finely grated parmesan in, or herbs, or a bit of paxo stuffing

then you just need to fry in a hot pan until done....you can oven bake but I find it's dry.

We have this with salad, or if you use those little mini breast fillets it's really nice with salad in a wrap


Or hunters chicken...butterfly chicken, wrap around a stick of cheese, wrap that in bacon and then I go through the fridge and use up the odds and ends to make a bit of sauce ...tomato purree or red pesto, a splidge of honey, couple of tbs of ketchup, maybe some chutney, shake of lea and perrins...but really it's probably a bit warm for that too

pesto chicken? again with the slicing and bashing, slather on some pesto but no crumbs required, and then griddle

lemon, honey and soy is nice too...let them sit in it for a bit and then pan fry

Sesame miso chicken. Griddle or dry fry red pepper sliced to char them a little.
Cook chicken pieces for a couple of mins. Add garlic and ginger paste. Cook. couple of tablespoons of miso paste and soy sauce in a small bowl. Loosen with tablespoon of hot water. Add fresh/straight to work noodles to chicken. Add red pepper back in. Add the miso sauce mixture and a tablespoon of sesame seeds. Tablespoon of sesame oil to serve.
V quick and yum. Potential to add extra veg/chilli in as you like.
