Jacket potatoes for elderly relative

I'm trying to make sure she has enough 'go to' meals with her arthritis and it seemed like a good idea to roast a few jackets as an easy to cook thing for when I'm not there. So I'd roast 6 and freeze some of them.

How do you prepare after freezing though? Do you just untangle the silver foil and bung in the oven or do you defrost first then reheat in oven? (No microwave.)

I've never actually tried them but know you can buy frozen ones now so I just had a quick look at what the instruction are for those and it says this

Cooking Guidelines

Cooking Instructions (General): All appliances vary a bit, so the cooking instructions below are just guidelines. Make sure the potatoes are piping hot all the way through before serving.
Microwave (From Frozen): Microwave in 5 mins
One potato 800W 6 mins, 900W 5mins
Two potato 800W 8 mins, 900W 7 mins
Three potato 800W 12 mins, 900W 10 mins
Four 800W 16mins, 900W 14 mins
Pop the potatoes on a microwaveable plate and cook from frozen. When the time's up, leave them to stand for a minute before tucking in.
Oven cook (From Frozen): Remove all packaging and cook from frozen on a baking tray in the middle of your oven at 220°C/425°F/ gas mark 7, for 45 mins.

That's really kind of you to type all that out @Blondie1894. I was impressed as I was scrolling down reading a very methodical post, and was about to reply how sweet you are then got to the end and blushed!

I think most people would be happy to cook for disabled people though.

So far I've tried roast chicken, salads, cauliflower cheese, was thinking pre cooked jackets might make eating easier as well.

Would your relative be happy using a microwave if you bought one? A small basic one can be less than £50 (bought one for my relative for about £40 recently!).

Even if they wanted to heat most things in a “proper” oven, they are great for defrosting home cooked batched portions (if you freeze in a glass dish, ie Ikea does lovely ones, they can go in freezer to microwave or over), and it’s about 5 min to microwave a ready baked potato for a quick meal (ie with a portion of frozen homemade chilli or whatever).

refrigerated jacket potatoes are good for a few days to just reheat in the microwave

Not sure about jackets, but I bought some of those tin trays last week and did some shepherds pies for my Nan.she just sticks one in the oven, and it's easy for me to make extra when cooking in an evening! Those smaller ones are a perfect size. I agree, you sound really lovely!

frozen mash is good too.and you can even buy packets of the stuff which is really good.
I did the same for dauphinoise potatos and then froze it in the dish.all she had to do was bung in the oven for a bit longer.meant she was getting good meal.
