Looking for inspiration / so bored of cooking the same things every week

Every week we have curry, wraps, pasta with cheese and spinach, quiche, pizza, veggie burger and chips etc

1 vegetarian, 2 pescatarian, 1 meat eater and I'm low carbing! I try to cook something that suits all but can adapt so for example with curry I cook rice and cauliflower rice for me.

I'm just in need of some inspiration to cook some new dishes. I love cooking and can happily spend up to an hour preparing. I'm just in a rut.

Can anyone help, please? Smile

Spanakopita, you could make a sort of feta and spinach omelette on the side for you?

Veggie fajitas
Sweet corn/courgette/whatever fritters
Stir frys
Baked feta
Hallumi and roast veg with nice bread
Falafels and whatever else.
Veggie mousaka
Aubergine parmasana
Courgette and mozzarella gratin (able and Cole recepie)
Gigantes plaki

Some great ideas, thanks. I love spanakopita, not sure I could resist if I made it.

I should add that the one food item we all mutually hate is aubergine.

Stuffed peppers are easily adaptable. Can be stuffed with/without rice and with/without minced meat. Top with mozerella and grill. Some recipes have a Mediterranean twist and others are more Mexican, depends on your taste I suppose!

Fish with pizza toppings (the vegi could use french bread), Get a fairly thick white fish, spread passata over and then add pepperoni, peppers, olives, mushrooms, top with cheese and put in the oven for 20 mins.

I just came in this section to say exactly the same thing- in need of some new teatime ideas!
Will def try the stew

We do loads of soups with home made bread
Also chicken breasts in tray, cover with a pot of creme fraiche that has had Dijon mustard stirred thru. Bake.

Risottos or baked rice dishes esp Thai ones

Stuffed jacket potatoes

(Just realised these aren’t very low carb friendly sorry)

I love doing a ratatouille! or a stir fry - you could opt for zoodles or something if you're doing low carb, if you don't have a spiralizer you can get them pre cut from or use a vegetable peeler to make ribbons. I know what you mean about getting into a rut! I have just found this fish pie recipe which i love! Great to make ahead and have over the next day or so!

I have a blog I’ve been doing for a few years with loads of simple but tasty meals on. Take a look. My husband who’s a photographer takes the photos for me, but it’s the real food we eat. I even have a few cooking videos to help? Like katsu curry and roast cauliflower
