Gaaahhhhhh! Please help me with my lemon loaf!

Help! I've lost the recipe I used to use for lemon drizzle and am failing miserably with Mary Berry's loaf version.

Tried it a few times now and every time I open the oven door to a sunk cake. I don't mean a bit of a dent ( which wouldn't really bother me) but a huge crater, almost to the bottom of the tin. I don't open the oven door whilst it's baking, honest!

I have tried reducing the oven temperature from 180 to 160 and baking for a bit longer, but it hasn't helped.

The recipe calls for self raising flour AND baking powder....wondering if that might be the problem.

Any tips very welcome!

Yes it does sound like there’s too much raising agent which is making it rise too quickly and it can’t sustain it.

How long are you baking it for? Are you using the specified size tin?

I use this recipe and it hasn’t failed me yet! If you don’t want the drizzle its easy enough to leave off.

Tana Ramsey recipe is foolproof. Have a look at that. If you can’t find a google link ( I can’t do clicky links] I will post the recipe

Oohhh, thanks both, was just thinking it might be better to try a different recipe!

I've found the Tana Ramsay recipe I think Glitter, is it the bbc one?

They both look good, will give them a try. Thanks Cake
