Mint recipes?

Mint has gone crazy in our garden - any good recipes that I can use it in?

Generally we only ever use fresh mint for pimms

P. s I don't like mint tea

This Nigel Slater recipe looks interesting...

Mint frozen yogurt

A mint and chocolate sorbet, without the need for an ice-cream maker. Serves 8-10.

caster sugar 250g
mint sprigs 15g
water 250ml
yogurt 650g
dark chocolate 60g

Blitz the sugar with 10g of the mint sprigs, leaves and stalk, in a food processor. You should end up with moist, green sugar.
Put the sugar and water into a saucepan and bring to the boil. As soon as the sugar has dissolved, remove from the heat and cool the mixture – either by putting the pan in a sink of cold water, or by pouring the syrup into a bowl set in a larger basin of ice cubes.
Blitz the remaining mint briefly with the yogurt, then stir into the cooled syrup and mix gently.
Transfer the mixture to a plastic freezer box.
Keep in the freezer for a couple of hours or until ice crystals start to form on the edges, then stir or whisk them into the liquid centre and return to the freezer.
Repeat a couple of times until almost frozen, then roughly chop the chocolate into small pieces and gently fold it in.
Return the mixture to the freezer and leave until frozen.
Scoop into bowls and serve.

Chopped finely and added to cous-cous.

My favourite salad (bloody easy, never any left). So summer.

Cucumber Salad:

1 cucumber, peeled. Slice vertically and scoop out seeds with a teaspoon. Slice into crescents about £1 thick
Small bunch of mint chopped
1tsp of caster sugar
Mirin/rice wine vinegar

Mix cucumber, mint, sugar and then add at least two and up to five tablespoons of the vinegar. Leave for 15 mins. Devour.

It's really nice with potatoes or pasta and feta, peas, asparagus. Or in a Lebanese / fattoush salad with cucumber and tomato. Oh, and there's that Jamie Oliver recipe with pineapple and mint link

Mint and balsamic jelly. Lush with lamb.
You make a basic apple jelly, but replace some of the liquid with vinegar, and loads, much more than you think you will need, if chopped mint which you stir in after setting point is reached.

Make a minty and delicious Fattoush!

I have made this recipe three times in the last week (I swapped the parsley for coriander and sprinkled some pomegranate seeds on top too)

We've had a chicken pilaf for tea tonight that was garnished with mint. To serve four, 1 large onion, chopped, soften in oil, add four chicken legs, deboned and chopped, cook through, stir in 4 tablespoons korma paste (I also added extra ginger and garlic at this point), add plain cooked rice and coat, stir in 50g Greek yogurt, 2 tablespoons mango chutney and season. Heat through and serve with fresh mint, chopped, toasted almond flakes and mango chutney.

It also goes well with lamb meatballs with a Greek salad themed serving. Search BBC Good Food, there's a lot of mint recipes.

Cut courgettes into coins and grill
Tear buffalo mozzarella into a bowl
Add the warm grilled courgettes
Tear lots of fresh mint over
Dress with lemon, salt and olive oil

If you have some burrata you can just put the courgettes and mint on a plate and plop the burrata on top. You can also add pine nuts or orzo if you want to make it a little more substantial.

Fab recipe on the guardian this week for a Thai ish chicken salad, needs mint and coriander. Quite a few ingredients mind...
