Potato salad?

What's your favourite recipe/method? I just use bought mayo and chopped red or spring onion...how do you make yours?

Half mayo, half creme fraiche. I use spring onions but soften the whites in a bit of oil along with a small amount of garlic. I use halved new potatoes as I like it chunky.

Like the creme fraiche idea...I only halve the potatoes too. Got some gorgeous jersey royals to use today.

Standard is mayo, cremefraiche or soured cream, splidge of salad cream, snipped chives, plenty of S&P and make sure to add the potatoes whole and warm and cut them through with a knife in the mayo mix.

To fancy it up then
crispy bacon is fab
spring onions or shallot also delish
and those awful hot dog sausages cut into really fine round slices, or some chorizo strips added in at the last minute.

Mayonnaise, chives and (controversially) hard boiled egg. Like the sound of bacon. I've also done an egg free version with olive oil, olives, tuna and green beans.

I really hate mayo so I use yoghurt. My favourite recipe at the minute is a mix of white and sweet potatoes, spring onion, avocado and greek yoghurt with some mint, bit of chilli and lemon juice. Sometimes I use honey and dijon mustard instead of the mint and chilli.

I did mine with Helmans mayo as I don’t have creme fraiche. But as above added spring onions. If I don’t have spring onions I’d add a red onion, lovely and sweet 😋

Mayo Plus a dash of white wine vinegar, spring onions, chopped dill and finely chopped gherkins. Served with boiled eggs.

I like to put a vegetable stock cube in the water that I boil the potatoes in :)

I add a squirt of salad cream to my mayo and spring onions. Might try a creme fraiche salad cream combo next time.

I use mayonnaise, chopped chives or spring onions and a squeeze of lemon juice.
Lots of salt and pepper.
Very tasty.

I use potatoes with skins and it ends up half mashed and half chunky. I mix mayo with spring onion, chives and finely chopped red onions. Lots of salt and pepper and top half with finely chopped eggs.

I boil a finely chopped onion in gherkin pickle liquid.
add that, some pickled gherkins, apples (chopped) and half yoghurt/mayonaise.

Dress warm new potatoes with French dressing so it absorbs, then add spring onions.

Warm diced boiled potatoes, may, wine vinegar finely diced onion and chives. Chill overnight.

we're (controversially) a no mayo potato salad household! We do potatoes, onion, gherkin, white wine vinegar, spring onions, caraway seeds and shed loads of dill...

The main thing is to dress the potatoes while they're still hot. I prefer vinaigrette, but mayonnaise is also acceptable.
