Risotto ideas

As per my other thread about very full cupboards, I'm trying to use up a pile of foodstuffs and have a packet of risotto rice that needs using.

I'd like to include it on next week's meal plan but no idea what to make with it. Any suggestions? Just for me and DP as DS won't touch rice. DP hates mushrooms so can't include those, as much as I'd love to make a huge vat of mushrooms risotto :)

Other springy risottos:

  • lemon & parmesan
  • broad beans, peas and artichoke
  • tomato, cheese and basil

butternut squash (cut unpeeled into little chunks and roast till caramelised), sage and maybe goat's or blue cheese......ummmmmm

lemon, herb and parmesan (any combo fresh herbs, dill basil parsley) bung some artichokes in too

Chicken and green veg (peas or asparagus are good).
Lemon, courgette and prawn.
Butternut squash.

I made such an easy and quick one last night, by accident!

Fry onion & garlic in butter. Add couple of handfuls of rice, white wine if you like. Add 2 tablespoons of Marigold powdered stock. Kettleful of boiling water. Black pepper. Transfer to ovenproof dish with lid on high. Come back when rice has absorbed fluid. Grate in parmesan.

DURRR I forgot! Chuck in asparagus spears, I cut mine into 3s, and a couple of handfuls of frozen peas with the rice & wine!

Peas, broadbeans, goats cheese and pesto.
Diet friendly it isn’t but it is gorgeous

it also makes a really nice addition to a spring chicken thigh stock stew
do you like rice pudding you can do a proper old fashion version
it makes lovely rice one pots too.

DH does a lovely one with onion & garlic (obvs) chorizo, red peppers and half a tin of tomatoes, splash of red or white wine and chicken stock.

Salmon, peas and asparagus. Fry onion, put in rice and stock, about 10 mins before the end of the cooking time throw in the salmon and veg and then finish off with parmesan.

Chorizo risotto (and a super easy method) slice chorizo into thin rounds, warm it gently in a little oil then remove from pan with a slotted spoon. Fry chopped onion in the remaining chorizo flavoured oil then add 300g risotto rice, 1 litre of veg stock and a small pot of sundried tomato pasta sauce (or mix passata with red pesto and add) cover pan and simmer gently for 15 mins, stirring occasionally then stir in the chorizo. Simplest recipe ever and so good! You can even leave out the chorizo at the end if preferred and use for something else as all the chorizo flavour is in the onions and rice...
