I made a lovely no-bake cheesecake last year, and I want to make it again. But for some unfathomable reason I have no quantities on my recipe - no idea why
Anyone have any idea what the quantities might be?
Here's the recipe:
Melt the butter.
Place a layer of ginger biscuits in a springform or loose-base cake tin.
Carefully pour a teaspoon of melted butter on each biscuit.
Repeat, so that the biscuits overlap.
Zest and juice the lemons.
Beat the mascarpone and the cream cheese together.
Beat the sugar into the cheese mixture.
Beat the lemon juice and vanilla into the cheese mixture.
Put cheese mixture on top of the biscuit base and tap or smooth to level.
Sprinkle lemon zest on top.
Leave to set.
