Salads without needing lots of fresh ingredients?

I really need to eat more salady type food, however, as I’m basically the only one in the house who will eat salads I was looking for ideas that are maybe based around tinned or store cupboard ingredients so that I don’t end up with lots of fresh food that goes to waste!

Fresh ingredients that don’t go off as fast as bagged salad leaves, such as carrots and white and red cabbage grated into a slaw.

Tinned beans such as cannelini and flageolet.

Jars of olives and mini gherkins.

Jars of grilled peppers and artichoke hearts. Look in small ethnic shops.Polish and Turkish are great for these. Beware anything in oil if this is for weight loss.

Grow your own leaves on a window sill and cut as required?

buy whole lettuce like iceberg they last way longer.
tinned sweetcorn
you can buy lovely ready to eat mixed bean tins with vinegrette.really nice.
chickpeas.
use orzo pasta for some great salads.
quick stir frys.
we put raw broccoli in our salads which are great.
whole carrots to grate yourself.
warm salads.sauteed down lettuce is lovely with garlic and onions when the leaves or going a bt passed it.
braised lettuce and peas is also really good.

add some lentil to make you salads meals.or bulgar wheat or pearl barley.
add going past it cabbage to a bacon and potato bake.
roast beetroot red onion and sweet potato yummy.infact all salad bit of lovely when put on a pan with some garlic and roasted.even lettuce.

Salad items like chicory and fennel and celery last longer than bagged leaves. They last ages in the fridge, as do red peppers.

Apples, celery, walnuts = salad.

Carrots, beetroot and butternut squash all last a long time.

Sainsburys do a frozen packet of mixed chargrilled Mediterranean veg which is great for cooking and adding to a couscous salad with chickpeas or crumbled feta cheese.

Really simple but nice. I've made this for decades- you can leave out the parsley or add some dried green herbs or use spring onions instead of red onion. Sometimes I add tomatoes and a few tinned sardines on the side to make a complete meal.
