Bakes that get better with keeping

I need to bake something for a team meeting on Monday but have a manic weekend so was hoping to bake something on Friday evening - but all my "go-to" recipes are ones that really need eating within a day or so
Can anyone recommend any recipes that improve the older they get? I know there are fruit cakes but I don't really want anything that heavy/dull

Madeira cake, and add glycerin to help keep it moist. Keeps well for about a week. Or Parkin but not very seasonal.

Or make scones and freeze before baking, then bake on Monday morning and take jam and cream to work with you. They only take about 10-15mins normally and probably a bit longer from frozen.

Ginger cake from Hairy Bikers Mums Know Best - I think it's called Sindys Ginger Cake or something. Beautiful after 2 days as the syrup rises to the top.

I agree with ginger cake. Nigella’s chocolate gingerbread (no icing) is amazing.

Also, her chocolate Guiness cake keeps really well.

I make Mary Berry’s Chocolate Brownies. They taste fabulous the longer you leave them. Have been known to serve them after a week in a Tupperware, when they’re at their squidgy-ness!

Something like this is very easy as you melt half the ingredients and weigh out the other half mix together and pour in tin

I usually just chop the stem ginger finely rather than grate as we prefer it that way

It says it keeps well for 4-5 days and it does! It's still so moist even on day 4.

I second the Mary Berry brownies. I made some on Sunday and they're still fine just had one even if it is half seven in the morning...

Chocolate brownies
Banana cake
Tanya Ramsey's lemon drizzle cake is freezable so you could just take it out Monday morning and let it defrost on the way to work

Banana bread or ginger bread always improve with keeping a day or two.
Lemon and poppy with syrup drizzle fine too.

Cake freezes well if it’s well wrapped. So any cakecrecipe would be good unless it has fresh fruit in which would go soggy on defrosting.
