High protein, low carb vegetarian main meal ideas please

I’m in the middle of a three week stint of not eating crap with a few intermittent fasts thrown in. Everyone else doing this at the gym I’m going to eats meat so all the suggestions for meals are along the lines of salmon/lean meat plus salad/steamed vegetables.

I’m getting heartily sick of omelettes and am running out of inspiration. Tonight I’m having stir fried vegetables with cashew nuts but no noodles which I think fits the bill but could do with some more ideas please

Dal, the food of gods. Red lentils have about 40g of carbs in each up, bit also about 15g of fibre. Do a quick stir fry curry of veg and nuts to go with it and you will be fed well on few carbs.

Or are you planning to be almost carb free, which is difficult as a veggie.

Slabs of tofu marinaded in teriyaki sauce and fried are also good. Make your own sauce to dodge the sugar.

Or quinoa salad english grown if you need to be ethical with loads of roasted veg and seeds.

Loads of eggs and cheese is not a healthy veggie diet.

Sorry, posted too soon! I use Quorn mince to do taco salad or shred fillets to throw into a stir fry.

I just cooked this curry today for tea tonight, switched the rice for cauliflower rice. It tastes really good (impressed with myself as I'm not a very good cook!)

DP made Spanish cauliflower rice that was amazing! We served it with a chicken breast but you could maybe substitute the chicken with something? I'm not vegetarian but have discovered a local cafe that serves mainly healthy vegetarian dishes so I've been inspired to try some new recipes Smile

Beans are pretty filling and good for protein.

A mixed bean and veg chilli, maybe with a little grated cheese or sour cream.

If you eat meat substitutes then a veggie sausage casserole with plenty of vegetables and beans.

Frittata (if you're not already sick of eggs!)

spiralised veg carbanara.
ratatoule with cauli rice.
make pizza crust out of cauliflower.
butternut squash curry.
puff pastry but ever so thin little tarts.
lentil pie with cauli mash.mix in some horseradish and fennel at times too.
savoury veg crumble with almond flour crust
almond flour crust veggie creamy garlicky pot pie
