Two sausages, 3 hungry people.

I have two smallish cooked sausages in the fridge I would like to use up tonight. To feed myself and DCs, 9 and 13. What's the best way I can stretch them? All I can think of is pasta, Tom sauce, broccoli and slice them very thinly. But that's a bit boring, anyone got any more exciting ideas?

Got potato and eggs? Frittata. With the sausages and eggs and whatever other veg you like (I usually cook the veg first and actually prefer mine less eggs and more veggie)

You can use all veg stock if you don't want to use wine :)

Sausage lentil stew?

Saute onions, garlic and sausages, add can of toms and can of water and a few handfuls of lentils. Simmer till soft. Can also add chili, paprika etc

Serve with mash or bread.

I came on to say a sausage and lentil stew as well. We sometimes have sausage 'casserole', with a tin of baked beans replacing the lentils.

Cook and chop sausages . Raid cupboards/freezer for tomatoes and tinned beans and anything else. Put in herbs and chilli and mix together for a rich casserole (with just a bit of meat).

As a student I used to do a sort of (veggie) sausagey stir fry with rice and whatever veg I had lying around (or none, being a student!) No reason it wouldn't work with meat sausages, and sliced not too thick they went quite a long way.

Sausage pasta - chop onions and sauce with garlic. Add fennel seeds. Add chopped sausage, handful of fresh tomatoes (if you feel like it) and grate in some lemon zest. Add equal parts white wine and milk (you can lower or skip wine if you like, but I think it adds a lot of value). Then add creme fraiche to create a sauce. (Cream would work too but you probably need less). When cooking pasta, add some greens to water at end - I like spinach but kids prefer peas. Alternatively, add some chopped courgettes at same time as the sausage etc. Salt, pepper and a squeeze of lemon juice over the top.

Absolutely delicious and makes sausages go a LOOOONG way.

(the proper way to cook this is with uncooked sausages, out of their skin and roughly chopped and without onions as per my original recipe. But we almost always do it with leftovers and I find the onion adds depth of flavour in this situation. I've been known to add a few mushrooms too to bulk it up but prefer not to as it turns it a weird grey colour!)

Thanks, some good suggestions. They were born in a sausage and bean stew, so I want to do something different - plus it's a bit sunny and hot for stew. Frittata probably the frontrunner at the moment.
