Pineapple recipes please

DP has just come out of hospital-he was in 10 nights unexpectedly so the pineapple I bought before he went in has a slightly off taste. It’s still absolutely fine but not to eat fresh. Easy ideas to use it up please? Thinking something with plenty of sugar....?

All the recipes I can find are American and too much effort (I now have him to look after as well as my DCs). I know I could just chuck it but I hate waste and love pineapple! Thanks.

You could do pineapple upside down cake or tarte tatin....or make it into some sort of pickle/chutney
Or you could cover it in brown sugar, stick it under the grill until the sugar melts and then eat it with ice cream :)

Ham and pineapple pizza
Pineapple, banana, coconut and orange juice smoothie
Whizz it up with some coconut milk and put into lolly mounds for a very refreshing ice lolly.

in a crumble with a butterscotch sauce or adding some coconut eto the topping works great
bake serve with ice cream and wafers
cook in a pan with some butter really brings out flavour.serve with some madera cake.ginger cake or digestive biscuits.
stir through cream with some mango and coconut. and layer on gronala
