Post your midweek vegetarian recipes please!

Want a meat free week (and hoping to extend it if it goes down well with the rest of the family). What are your go to midweek (ie not too long and complicated) vegetarian meals? To make things harder, I have a tomato hater so non-tomatoey ones in the mix would be great. Tia

Favourite by far is bean casserole - garlic/onions/peppers fry til nice and soft, add tin or 2 of mixed beans, then stir in some veg stock and/or crème fraiche/vegan "cream cheese" and heat through, we serve with rice or potato rosti.

mac and cheese

veg stew

fritatta if eating eggs

mushroom risotto

or the old stalwart - pizza.

Veg fried rice-

Cook rice
Meanwhile, chop up whatever veg you like quite small, stir fry in coconut oil. When rice is cooked add to veg and stir fry. Ginger/chili/sweet chili sauce optional but delicious.

You can also whisk an egg up and add that when stir frying the rice if you want.

We do veggie fajitas when in the mood for something quick and easy-

Heat some oil and add chopped peppers, onions, and garlic.

Then add kidney beans, Linda McCartney shredded chicken and old El Paso 'smoky bbq' fajita seasoning.

Continue to cook on high heat for about 15 more minutes and then serve with whomemeal wraps, cheese, BBQ sauce, salsa etc

Pasta bake - I cook a veg lasagna at the weekend and save half of the sauce for a pasta bake mid week.

Veg curry (I make a tomato and onion base and then use whatever vegetables are to hand). Sometimes it's just frozen veg like spinach and potatoes.

Red lentil daal with boiled rice and a basic salad of finely chopped tomatoes, lettuce, cucumber, carrots and sweetcorn.

Halloumi and sweet potato salad with crusty bread. It's so good I actually think it would be my choice of 'last meal'

Butternut squash, mixed veg and butterbean soup.
Get a butternut squash and slice it in half and take out the seeds. Cook it in the oven until its softish and scoop the flesh off the skin. this is a faff so take your time.
Place a bag of mixed veg in a big pan pour over a tin of tomatoes and crumble two vegetable stock cubes.Drain a can of butterbeans and add this and the butternut squash to the mix.
Put some water in the pan as well so the veg is all covered. Bring to the boil then simmer until its done. Season with salt and pepper.

Lentil Bolognese is about half an hour and always goes down well with everyone

If you have a little longer roast veg and halloumi with couscous and harissa sauce is amazing, as are halloumi burgers

Vegan Mushroom Stroganoff (can be vegetarianised by using double instead of oat cream and top with cheddar or Italian hard cheese grated)

2 packs button mushrooms. 1 onion diced, 1 -2 cloves garlic finely diced (or a good tsp very lazy garlic) 2tbl spoonfuls nutritional yeast (optional but tasty), veggie soy sauce, veggie stock pot, few tbsp flour, boiling water (about 150ml), dash oat cream.

Fry onion until translucent in some oil or vg butter, add in mushrooms and dash soy fry for 2-3 mins, add garlic and do same again. Set aside and make a roux with oil, flour and boiling water mix in stockpot. Add nutritional yeast to mushrooms stir in well add stock sauce slowly until thickness desired (I don't like too much sauce!) cook through, season as desired and add a dash of oat cream just before serving, for veggies top with cheese and serve with rice or pasta

Mushroom stroganoff.

Fry onion, add loads of mushrooms, paprika and garlic. Cook for a bit then add 150ml veg stock and simmer. Add some sour cream (about 3 dollops) towards the end, off the heat to avoid it splitting.

Lush with rice or on thick buttered toast.

Frittata/omelette with salad and garlic bread
Roast veg & halloumi skewers
Mediterranean veg, mozzarella & pesto tarts (shop bought pastry in this house!)
Baked potato with whatever fillings. (I know you said quick but you can get them started in the microwave)
Falafel, hummus, veggies & pitta
Veggie burgers
Tortellini
Stuffed peppers
Macaroni cheese, cauliflower cheese (combo of both is actually lovely and when I'm doing that I figure why nor add broccoli too Wink)
Pizza/flatbreads
Fajitas
Stir fry

A couple of really easy ones:
Mushroom and haloumi burgers - roast some big mushrooms with a bit of garlic inside them
Fry haloumi slices
Stick in buns, with salad and chilli sauce

Roast chunks of butternut squash (I buy it ready sliced), chunks of pepper and chunks of red onion. Cook pasta. Mix the vege into the pasta then add creme fraiche and/or cream cheese, plus a splodge of pesto and drop of milk. Warm through and eat. Or put into oven proof dish, cover with more cheese and put under grill until bubbling. Nice with spinach leaves added too.
