Up to date buffet ideas

I have realised after reading another thread (about in-laws stuck in the 70s) my buffet menus are very 70 's.I would like to try something different.More colourful and healthy.
I am doing a buffet at Easter and instead of the usual vol a vonts and sausage rolls I would like to do a more modern buffet.There will be older teens,adults and vegetarians there.
Does anyone have any recipes or recommendations of pre prepared foods to buy?
Or advice on what to serve.Thanks.

look on Pinterest for ideas. There is a great baked Camembert which looks like a sun. You make a ring of twisted dough sticks and bake the Camembert in the end centre.
I like to make big flat breads with various toppings, a slightly more sophisticated pizza I guess.
Marinated chunks of chicken breast on cocktail sticks.
Include plenty of salads for colour, crudités with a selection of colourful dips (beetroot and horseradish is amazing).

I'm planning on doing something in a month or so - doing a spiced full side of salmon (has rave reviews on M&S), a side of gammon, hot potatoes, then lots of side dishes (like a warm green lentil salad with walnuts & goats cheese, a rice salad with butternut squash & pomegranite seeds - all very colourful) and "posh" breads. No sausage rolls or vol au vents!

Posted too soon. I’m also scoffing on leftover mini Yorkshire puddings with roast beef and horseradish. There were Parmesan baskets filled with figs, pesto and Parma ham plus cold meats, mini frittata and a quinoa salad with feta, loads of herbs and veg.
I hate beige buffets so I loved it.

My colleague did a USA-themed buffet:
Mini pulled pork sliders
Mini hot dogs (using finger rolls and chipolatas)
Onion rings
Sweet corn salad
Mozzarella sticks
Southern fried chicken strips
BBQ sauce, American mustard, ketchup

Pudding:
Rocky road, brownies, New York cheesecake

I like to do a middle eastern or Turkish inspired mezze spread for adults and adventurous teenagers, a lot can be bought from supermarkets or made easily at home. components can include:

-flatbreads/pittas
-hummus
-babaganoush dip
-couscous or bulgar wheat salad
-feta cheese

  • marinaded lamb and chicken skewers with veg (halloumi or aubergine versions for veggies)
  • grilled halloumi

-shell-on prawns cooked in garlic and dressed with lemon (bit messy to eat!)
-tomato salad
-green salad
-olives/Sun dried tomatos/jarred red peppers

Good quality sausage rolls are timeless! I tend to follow a theme around a particular cuisine - American, Italian, Mezze, Tapas, Indian or indeed the 70's which ironically now is very up to date!

Serve food you love, that's easy to eat standing up or eating off a lap - if table room is limited, have some light relief in the form of salads and do something that doesn't cause you too much stress.

Thanks for all the suggestions.
What sort of sweet things do you serve?
Is there a guide to how many different types of dishes should I make?
I am now really looking forwards to making the buffet.It takes me ages usually ( the kids help)and I don't really enjoy the stodgy food.
(Dh cooks the roast dinner so we take it in turns to do the cooking)

Mostly avoid sweet things and do a cheese board. Homebaked cookies with ice cream, or lemon posset with shortbread, choc mousse with shortbread, cheesecake, pavlova - basically anything done before hand.

churros.
big bowl of eton mess.one strawberry.
one chocolate and fudge version with instead of strawberry you add maltesers,choc button fudge carmel sauce.bought brownie piece.
devine.serve with bowls and let em dig in.
