Help with a menu with limited ingredients

I need to make a soup starter and a chicken main with potatoes and vegetables.
I have the following:
Any fresh fruit, fresh vegetables and fresh herbs except beans, peas and sweetcorn.
Dried spices: salt, pepper, cumin, cinnamon, coriander, paprika.
Chicken legs
Sunflower oil, tomato paste, chicken stock cubes, ketchup, dried apricots, sugar, eggs.


That’s it. No substitutes allowed.

I was thinking of a chicken tagine type main with the dried spices, tomato paste, apricots and stock. Served with mash or roasties. But couldn’t think of a soup that won’t taste very similar.

Any other ideas would be greatly appreciated.

Or a root vegetable soup with the dried spices and a different chicken recipe.

I think stick with the tagine - that's a great idea. No need to spice up the soup, just let the veg be the star. If you can get any fresh veg and herbs, I'd do one of the following:

Broccoli
Leek and potato
Carrot and coriander
Roast tomato and basil

Butternut squash soup- amazing.

Sweet potato, chilli and coconut milk soup - spicy, tasty and aromatic! Yum.

Is this some kind of challenge? Such an odd mix of things.
Chicken goes a bit stringy/dry with slow cooking imo. Certainly your mix of spices plus apricots etc does suggest north African so I'd go with that region but not a necessarily.
Perhaps a spiced cauliflower soup? There's one on the bbc website but it has harissa in: you would be able to amend it I'm sure.

Bone and stuff the chicken legs with something full of flavour and cook quite quickly to maintain the moisture. Serve with a spiced sweet potato mash and roasted veg. (if it needs to be standard potatoes then add cubed sweet potato to the roast veg.)

Thanks for all the ideas. It is a bit of a challenge. It’s for Passover. All food that has been processed in any way has to be kosher and is very expensive. So I try to eat as much fresh food as possible to reduce the cost and waste. Hence limited cupboard food but unlimited fresh fruit and veg. There are lots of other rules but I won’t bore you with them.

spicy cauliflower soup as above.

If garlic counts as fresh veg/herbs, stuff chicken thighs and drumsticks with a paste of garlic, grated onion, tomato puree and basil leaves pounded together abd fried off to thicken.
Then roast until golden, and serve with a heap of roasted veg and potato rosti.
