Vegetarian living with omnivores - what can I eat?

I've stopped eating meat/fish in the last few months, but family still do.

I'm really struggling for quick healthy meals than can be made either with or without meat.

We don't do beans (although will do lentils, pulses etc) and don't want to overdo the carbs.

Any suggestions please?

Stir fry
Curries
Risotto
(DH eats all of those without meat)
Veggie sausages/burgers for you and meat for them
Filled pasta with pesto

Tagine
Pasta bake
Cottage pie (not hugely quick mind)
Chicken and veg/haloumi and veg skewers
If they are having something like steak/chops etc sub meat for large mushrooms topped with Stilton and walnuts

Toad in the hole - one batter, two types of sausages!
Fajitas - just sub the chicken strips with Quorn fajita strips
Pitta pizzas
Stuffed peppers - one load of rice, two types of mince, top them all with grated cheese and put in the oven together.
Egg fried rice - this recipe is super quick and the bacon can easily be added separately www.bbcgoodfood.com/recipes/6350/fastfix-fried-rice
Sausage Casserole- all the same prep and ingredients, just two different dishes for two types of sausage.

jambalaya paella and other rice on pots.where you can take ur portion out before adding meat in or serve meat on the side of a veggie based dish like stiry frys.mach and cheese.
making a bases sauce of onion garlic jar of tomato pasta sauce,peppers etc. then you can portion some off for yourself and add chicken or chorizo or pork to theirs.and urs you could stir through lentil or mushroom.stir through pasta.
hot pots with plenty of veggies.and lentil shephards pie.
fajitas is easy to portion off before you stir in chicken.
pasta bakes.
jacket potato with sides.
could you still do a big roast meal but for your do some roasted squash or stuff mushrooms at the same tmie the meats in the oven.or a veggie pie or burger so you get to join in with all the other bits.

Quorn and Lindsay McCartney products are really handy if you are doing sausage n mash or a roast etc you can just swap the meat for one of their products and so you are still only cooking one meal.

I often cook a veggie dish which is a meal in itself and if the meat eaters are fussy just grill/bake a piece of chicken or a chop and serve it on the side . For example, I might make Greek Briam and grill a chop for DH if he complains or make a Farro salad with some zataar chicken on the side, mushroom stifado with celeriac/root veg mash with some sausages for the meat eaters.

I also cook a lot of vegetarian meals and the meat eater has adpated and often doesn't notice the absence of meat. Italian food is an easy way to start -- spaghetti a la norma, creamy mushroom fettucine, pasta bakes, gnocchi with various sauces, spinach and ricotta ravioli, canneloni etc

Mexican wraps/burritos are good too as the meat eater can have a bit of meat amongst all the trimmings - black beans, avocado, salad, roast vegetables/mushrooms etc.
