Veggie recipes without cheese, egg or pasta...

I have:
Veggie/pulses curry
Veggie fajitas
Veggie chilli
Soups - various veggie/lentil
Stir fry with noodles
Roast veg/chick peas with couscous

Without cream/crème fraiche etc, either. (Am thinking of giving up dairy).
Any others? Am a bit stuck...

I’m curious as to why couscous and noodles are ok but pasta isn’t?

Mushroom pies/ mushroom stroganoff/ mushroom bourginon /mushroom (or any veg) risotto ( doesn't need cheese)

Potato or other root veg bouloungere

Gnocchi - squash gnocchi and sweet potato gnocchi as well as normal potato gnocchi

Veg burgers

Vegetable kebabs

Mushroom stroganoff using coconut cream

Korma using free from korma sauce

With your stir fry do vegetable wontons

Scrambled tofu - there are lots of recipes if you google but this guide is the most helpful and then you can customise it how you wish. www.thekitchn.com/how-to-scramble-tofu-234849

I love a good chickpea tagine served with couscous.
Falafel served in a wrap or pitta pockets.

Sorry should have said mushrooms are the one veg I don't like!

Tarts are a good idea, I've used pastry for quiches but maybe I need to branch out....do you just fill with veg (no egg/cream/cheese)?

Am in a bit of a rut as I seem to be making various meals that have the same sort of onions/garlic/tomatoes/herbs or spices sort of base.

Blondie - its just because dd eats loads of pasta at school (and meat) so want to avoid at home.

you could try some veggie cheese.what about some roasted veggieswith tofu,few garlic cloves.in the tart cases. do you use non diary milk or normal.make a quick roux and then put it into the cases.this would make a great alternitvie to a cheese or eggy fillin and still give you that saucey effect.
do you eat fish?
making white sauces could give you great alternative to the tomato ones ur stuck with.you can them with stock.milk.condensed soups.
one thing we love is just getting a ready rolled jus rol pack.lay on baking sheet.then with a border left round the edge top with roasted veg.sqaush sweetpotato and red onion.thinly sliced potatos lemon and herbs.white sauce with tinned sweetcorn and peas. anything you like to top it.weve eve done a full breakie type on with layer of beans topped with tomatos.veggies sausages and then eggs ontop.then bae and it make a great slice pizza type thing but you can literally add anything to it.
what about things like rosti.
have you made stock based sauces.addig a bit of flour or cornfour to these will give you a whole new flavour set to play with with your usual tomato based sauces gone. adding some wine to it too or vinagers.
using cocnut milk.
sauteeing down things like courgette down to a pulpie mix with onions and garlic and oil is a great mixture sauce thing.
also making puree with carrots or butternut squash or sweet potato is a great alternative.
also no cheese pestos.
creamed cauliflower.

Google courgette and lemon risotto. I didn’t think I liked risotto until I tried this one. I add a pinch of dried thyme and sometimes frozen peas or peppers. Delicious and so easy.
