We've eaten an unusual amount of junk food this weekend for one reason and another, so I'm craving some healthier meals! I'll do a veg curry tonight to clear out the fridge but please share your favourite vegetable- heavy meals to inspire me for the rest of the week. Thanks!

Vegetable lasagne
Falafel or sweet potato burgers (Aldi) in pitta bread with grated carrot, spinach and red pepper strips
Fried Brown rice or quinoa with veg, chickpeas and cashew nuts
Brown rice and spinach bake (Delia Smith)

Ratatouille with wholewheat pasta and a scraping of parmesan (or bit of grilled fish/halloumi/chicken if you're going light on carbs too).

All of those ideas are great. Haven't done a ratatouille for ages and I'm going to Aldi so will try the sweet potato burgers. I love cooking and love veggies but I've been stuck in a rut of cooking the same old stuff recently. Thanks for sharing.

Vegetarian chilli

Veggie curry (Jamie Oliver's Friday night curry is good)

Roasted medditeranean veggies served with roast potatoes and some lamb chops or similar, and leftover veg then used as a pasta sauce, perhaps with some sausages chopped up into it if some meat is needed.

Spag bol sauce with whizzed up carrots, mushrooms, courgette and broccoli in the tomato sauce (blitzed in food processor)

Roasted butternut squash or pumpkin served alongside a steak/chop, and leftovers blitzed with some veg stock and chilli powder to make soup

This is delicious. It’s veg chilli with roast sweet potato chunks. I make a load of guacamole to serve with it and homemade tortilla chips. My mouth is watering just thinking about it Blush

Ramen and miso soup with loads of different veggies, surprisingly filling! (and I can eat a 12" pizza, wings and fries alone so don't have a birdlike appetite by any stretch of the imagination)

Home made stir fry

Stew/casserole can be very veg heavy.

Moussaka has quite a few too

JO veg chilli added to the list, thanks @AlishaMary it sounds ace.
I never made my own ramen, eaten plenty at Wagamama though Blush so I'll maybe have a bash at that too.

So simple but chop chilli and garlic, fry
Add grated courgette, peas, broad beans and rocket and stir in some pasta

If you're time short and just trying to add an extra veg to a dinner, wilted baby spinach is great. Open bag, pour leaves into a colander. Boil a full kettle. Pour boiling water over leaves through colander. Squish a little (to get excess water out - a potato masher works well). Serve.

I often do this just as I am getting plates out etc to serve up a "meat, potatoes and veg" dinner.

Roasted root veg is nice too just before the seasons change - parsnips, carrots, onions and butternut squash, even with sweet potatoes added in. Chuck in few potatoes to roast separately, and whatever meat too (chops, steak, chicken breast or a small joint are all grand) for an easy midweek roast to ignore while sorting homework etc. And you could prep it all the night before, so you just turn on the oven and set it going.

I can recommend the Plenty and Plenty More cookbooks from Ottolenghi for really interesting veggie dishes. Some of the ingredients are a tad difficult to come by locally where I am, but I buy them online and never had a problem getting hold of something I really wanted. I'm a massive fan of middle eastern recipes, especially veg ones and these books make my soul very happy indeed. Well worth the money imho.
