Confused by spinach and ricotta cannelloni - help!

All the recipes I’ve looked at say different things, I’m confused as to what to top it with. Do I make a bechamel sauce? Jamie Oliver says to use creme fraiche. Others say you only need a tomato sauce.

What should I use?

The Gordon Ramsay recipe is really nice, and you can make with premade tubes rather than fresh sheets

Creme fresh is easier but I think bechamel is traditional.

I use a recipe that calls for mascarpone mixed with a bit of milk (just to add another one to the mix!) But actually have used whatever's in the fridge before :- mix of creme fraiche, milk, mascarpone. As long as you top with cheese I don't think it matters!

I use spinach and ricotta in the base, then pasta covered in tomato sauce, toooed with melted mozzarella.
